The name of this wine is "soft acidity, umami, softness and transparency like Kyoho grapes.
It has just the right amount of acidity, sweetness, umami, and bitterness without being too rich.
Here is a comment from the lady at the restaurant who poured the sake for us.
I drink Tawawa every year, and this year is the best!"
Is that so? My expectations are raised.
The aroma is mild.
When you take a sip, the sweetness of the fruit spreads out.
The rest of the wine is firm and tight. I got the impression that it was more dry and crisp.
Thank you very much, Ms. Kohl. I was very interested in this wine, so I would like to have it again next year!

100% Yamadanishiki, 40% polished rice ratio, 17% ALC
The ginjo aroma is only faintly present. In the mouth, it is a mellow sake with a slight acidity 😋.

In mid-August, in the scorching heat of the summer, I was attracted by the flying name "Aki-agari" and bought it at Seijo-Ishii.
Wow, what a wild taste! It tastes like a tough or rough rice...? The description on the bottle says "powerful as a native species" and "deep flavor with a sense of vitality," but I see... this is an experience I've never had before..!
So, after drinking about half of it, I left it in the fridge for a while because I was on vacation and couldn't drink it.
When I drank it again after returning home...oh, now it tastes "like a wild melon that has fully ripened and then the bitterness and sweetness in the middle coexist"...!
And it's interesting that it's still wild...! It's a mystery...!
