This is a 50% Yamadanishiki sake brewed separately for summer sake. It is a summer limited edition sake with a low alcohol content of 14%, yet it is light yet present.
Sweet and sour taste. The acidity, which was more characteristic due to the change to nama-moto, has been smarter as an overall outline. The refreshing and light malic acidity, which reminds one of summer, is sharp and cute at the same time. Although it is a low-alcohol sake, the structure retains the Sentori character, and it is both clear and three-dimensional. The aroma is reminiscent of citrus fruits and herbs, and the acidity has a strong presence on the palate, as if a lime had been squeezed. The acidity is sparkling and beautiful.

Before I got into sake, this beetle came out as a recommendation at a soba (buckwheat noodle) restaurant. Thinking about it now, it was so sweet and sour that I thought it wouldn't go well with Soba. This is a strange summer sake that reminds me of beetle food.
...To comment seriously, it is light, as summer sake should be, with a coolness from the malic acid and a freshness from the unpasteurized sake. I mean, it is a modern and experimental sake with the Amaneko standing of Shinsei.
