[Drinking sake with ramen at Pojiya. After finishing the three different kinds of sake, my friend who was drinking with me ordered a glass of sake, and I was curious about the sake that came out, so I decided to order another one myself. Ajigasawa Yamahai Junmai Nama-junmai Nama-narashu. It has a fruity aroma with a floral ointment-like smell, a clean but juicy sweet flavor, and a sharp spiciness that lingers on the tongue and throat. First "Ajigasawa" 🎉. Aomori's "Tasake" and "Toyobai" have a sweet-tasting image, but it has a very distinctive aroma and a fresh spicy aftertaste, but it still tastes beautiful due to the abundance of melted snow 😋. I didn't realize how much effort Poziya puts into their sake 💦. Now that I've made a drunken hashigo-zake course, I'm sure I'll be a heavy drinker from now on ✨.

Like Kitanohomare, it was purchased at a liquor store where Nemuchi and I stopped by after the Ogimachi Park event. I'm not sure what brands they carry, but I get the impression that they stock a lot of Yamamoto, Eiko-Fuji, Chuai, and Yonesuru. I also wonder if they have a better stock of sake bottles. The first impression is light and refreshing, and the second half has a chemical-like umami and a strong alty taste. It's not my favorite type of flavor... I don't think you can tell it's a daiginjo if you drink it blind. When I drink it again, I feel acidity and a hint of sweetness. I think the sweetness has increased a little, so the nuance that I don't like has lessened. I don't care what you think, but isn't the balance bad because the seal on the bottle is the size of a bottle of raw sake? I thought so. The regular brand name of this brewery is Ando Suigun, but Ajigasawa seems to be a PB of a sake wholesaler in Shizuoka.

Lately I have come to realize that my favorite type of sake is dark, sour and deep, and when I see the words "unfiltered, raw sake," I start to drool. Ajigasawa is made by the Ozaki Sake Brewery, which is famous for Ando Suigun. The first aroma is sweet and sour with a hint of soy sauce. In the mouth, it has a strong acidity (acidity 2.7) and umami with a hint of sweetness. It is rich, sour, drinkable, and delicious 🍶.

We selected this Junmai Daiginjo from the refrigerator to go with scallops and tuna sashimi, and it was the only one in the tank that was made using Aomori yeast "Jyo" as the raw material rice. The label design gives it a classical image...but there is no gasiness. The top aroma is a gorgeous ginjo aroma like sweet melon and pear, and the aroma reminds of a deep forest behind the sweet fruitiness and the full flavor. Is it sweet? The citrus-like acidity is in harmony with the clean aftertaste. Rice polishing ratio : 50 Alcohol content : 17%.

Aroma: A sweet, mature aroma with no gassy feeling. After the gentle acidity, there was a slight bitterness, followed by a mushroom-like taste, and then the umami spread to the palate. It was delicious with grilled fatty salmon kama. Rice polishing ratio 60 Alcohol content 18%.
