Last night, I had a luxurious time with my students comparing two different sake brands, FY2 2021 and 2022, from Wakanami Sake Brewery. As I was explaining to them that even though they have the same name, there is a difference ✨and that it's a once in a lifetime experience 🍶, the students drank so much that I had to rush to get one for myself 😳The sake is always popular with the younger generation as well 😋.
2022-17 Welcome malic acid!
Following the 100th anniversary sake of Wakanami, we selected a local Fukuoka sake (although we bought it a few months ago). It has a refreshing image of summer sake, but we will have it as we approach autumn.
The first day: Yes, it's watery, but there's no sticking point, and it flows smoothly. It is easy to drink, but there is no lingering aftertaste, and it is not so bitter or sharp as to be dry. I would like to have a little more sweetness or bitter taste. Not a good match for 13% lately...
3rd day: No big change. No increase in sweetness or tastiness, just like a white wine. This was a starter wine to be chilled in the summer!
Day 7 It cooled down, so I heated it up, thinking it wouldn't be a good match, but it was quite good! It was deliciously sweet and acidic without being pungent.

It has a softly sweet aroma, with a hint of sweetness and a lingering acidity that leaves a lingering umami taste on the tongue after swallowing.
At 13%, it is a little low in alcohol content, but it was solid and satisfying.
Third drink of Craft Sake Week.
A refreshing, acidic type of Wakanami that I had never had before.
Easy to drink, acidic and sweet. The aftertaste was crisp and refreshing.

The aroma is not there, but the mouthfeel feels plump, with a slight sharpness, but with a moderate sweetness and no alcohol. Exactly like being able to act in moderate weather.

This sake has a light fruity feel with a sour taste. The liquor store pop-up said it had a luscious aroma of bananas and peaches, but it did not smell that sweet and did not leave much of an impression.

I personally look forward to Wakanami's FY2 every year in the summer sake quota.
It has a white malted rice-like acidity and a white wine-like flavor.
