Koka, Shiga Prefecture. Fujimoto Sake Brewery Co. KAMIKAI MIZUHASHIKO KUGOU Yes, it's from the Kamikai family 👕. GW is still a weird sake with a taste called rare cheesecake or pineapple yogurt 🤣. I will drink it cold. The color is clear with a hint of yellow. The initial aroma is a very unique sour alu aroma. The mouthfeel flows smoothly. Maybe a little viscous on the tongue. The taste is impressively sweet and sour. The aroma on the nose is lactobacillus-like and for a moment seems like cheesecake. Rather than sweetness, the presence of dense acidity leaves a mass of sourness on the tongue until after swallowing. The description says "Sake brewed with brewer's yeast using a 500-year-old brewing method," but I was frustrated that I couldn't use "Bodai yeast..." because it is a water yeast with a natural lactic acid fermentation process. Ingredients: Rice (domestic), Rice Koji (domestic) Polishing ratio:60 Rice used: 100% Yamadanishiki from Hyogo Prefecture Alcohol content:15 Sake mother: Mizu-hashiroshi Sake degree / Acidity: -22 / 3.5

Drinking at home. The aroma is like that of apricots. It has a slightly thickened, apricot-like sweetness on the palate, which disappears with a moderate acidity. As the name suggests, it is sweet and sour, with an image similar to that of Koei Kiku no Ikubou.

Koka, Shiga Prefecture. Fujimoto Sake Brewery Co. KAMIKAI HATADA ☆ SQUASH A limited-edition sake brewed with sake made from noble sake. Mr. Hatada said he adjusted the bubbles to prevent them from spurting out, but we opened the bottle with trepidation. I opened and closed the bottle for about 2 minutes, loosened the cork until the bubbles just stayed on the surface of the water, and left it for a while. Then the surface of the water rose and fell on its own... 😳 I've never seen anything like this 🤣. But please don't use blue bottles because it's hard to see 💦. Serve cold. The color is quite milky white with some ori. You can't see the bubbles that were spewing so much. The aroma is of freshly cooked rice with a hint of steam and yogurt. The mouthfeel is light and light. Yogurt-like sourness and flavor. After swallowing, there is a slight citrus aroma that passes through the nose and a bit of bitterness on the tongue. The sake is -30 on the sake scale, but the high acidity makes it feel refreshing. Not too much like a perverted sake 😁. Well then, let's continue at our own pace tonight with a glass of sake. Shinkai Junmai Ginjo Harusame Again, we compared the sake with a guginomi and an oinokuchi. [Gulping down the sake] A faintly fruity aroma, a full-bodied umami and acidity that finishes with a lingering bitterness in the back of the throat. [Inokuchi] Slightly sweet aroma, clear flavor and acidity, and a pleasant aftertaste that lingers in the throat. As you get used to drinking it, the light aroma that escapes through the nose, the sharpness of the umami and acidity, and the bitterness at the end fit well with the image of Haruna. I bought this sake at the sake corner in the basement of Hanshin Department Store when I dropped by there before the off-line meeting of the Sake-no-wa Kansai at the beginning of March, when the brewer came and held a sake tasting. At that time, I felt a little more sweetness, but maybe it was because I compared it with other sakes 🤔. I served with sashimi of striped horse mackerel, smoked salmon and Engawa yukke (Japanese style yukke) that I bought at a Hokkaido product exhibition. The fourth one is the new Kirin beer I've been into lately [Harukaze], which has a delicious sweetness and a refreshing aftertaste. Limited edition sake for the first time at the kurabiraki (opening of the brewery). Made with Kijo sake. This sake was also purchased by Kyukura and Nemuchi, who went to the Kurabiraki event together. Hatada-san said he was adjusting it, and it is actually quite better than HATADA☆SHAKE, but it is the type that spurts up a lot 😳. This time it is HATADA☆SQUASH. This sake was brought back to Koka and Konan at the time of the opening of the breweries. When we opened the bottle, it did not blow at all. It has a foamy bubbles and a solid nigori. It has a yogurt-like aroma of young bamboo. When you take a sip, it is lighter than expected, with a refreshing yogurt taste from the shwashy mouthfeel. The yogurt-like sweet and sourness flows down the throat like dried fruit, and the lingering sweet and sourness is followed by a taste of rice flour like white bean flour. It is refreshing with a strong shwash and deliciously drinkable. The sake has a sake strength of -20 and an acidity of 2.6, which is a very good spec. This time I prepared bulgogi and ham katsu for pairing. The refreshing, shwashy sweet and sour taste goes well with these sweet and oily side dishes 😊. Looking back at the photos in my phone, I remember taking a picture with a Peruvian food vendor who had a stall at Jinkai 😅. I was also forcing a picture with the beautiful sisters nearby 😅💦. You were forcing me to take a picture of the sake I bought in the middle of the rice field😅💦. Tokaido Spring Sake Brewery Tour was a fun adult field trip 😆🎒🍶✨

Tokaido Sake Brewery Tour in Spring (3) It takes about 30 minutes to walk from Mitomiku's to get there 👣. More homey than the previous two breweries. Children who asked, "Would you like some sake? and the children who asked "Do you want some sake? The tasting system here is to pour the sake yourself. I drank a variety of sakes, but the one I liked is in the upper right corner. The one on the left is Mizumoto. I liked the slightly peculiar lactic acid sweet and sour taste. I guess there are different tastes 🤔. Right side〈Koji Masamashii I liked it the most because of its sweetness. ❣️ I wanted to change my taste buds, so I ordered the sakeglia on the lower left side (charged). Sangria is a sangria made with sake and various fruits. Delicious to drink while eating fruit! After this, we took a shuttle bus to the Kisegawa site. Eleven breweries offered sake tasting. I liked Hatsuzakura's Hatsukoi and Laughing Four Seasons Retro Label. Here I ran into a group of Kyuzo, bouken, and Nemuchi! I thought I might not see them again, so I was very happy to see them. ❣️ Everyone seemed to be in a good mood after visiting so many places 😆. I bought taiyaki and ate them at the kitchen car at the end of the event. It was delicious 💕!

I bought some sake from Kamikai-san at the time of the brewery opening 🍶. We only drove there to buy the sake that day so no tasting 😭. I was so worried because I had decided to buy one bottle from each brewery to buy from other breweries as well 😊. I decided to buy this one because it was a limited edition sake and because I like strong fizzy sake. Finally the day of drinking at home! I was told that the fermentation in the bottle was strong, so I opened it carefully and was right: ❗️ If I wasn't careful, it would have spilled out 🤣. The taste is refreshing, with just the right amount of acidity and sweetness that I liked. It was 500ml and it ran out quickly 😁.

Continued... Koji Mashimashi Junmai Genjyu I heard that it has become much rounder and tastier. I thought it was very tasty indeed. I was told that it was very difficult to make because there was no rice to dissolve with koji because the koji is 70% koji and 30% kake rice. He said he would not make it next year 😁. Harusame Junmai Ginjo It had an aroma and was delicious with a modern fruity sweetness. I had the same impression as when I tasted it at Hanshin Department Store. Amazappai Junmai Genshu The sweet and sourness of this one is amazing. The sourness is clearly superior to the sweetness. It is like wine. The toji-san said that harusame and "Amaupai" are not like us. Rin to shite Junmai Genshu. A proper, orthodox, easy-drinking sake. Very hot Junmai Genshu. The attack was so spicy, I couldn't help but say 💦. Paid Tasting Junmai Daiginjo Shizuku Shisui A high quality sake that costs 10,000 yen for a four-pack. Beautiful and proper sake 😁. Junmai Daiginjo Miyano Shikisui This is a high-end sake that costs about 3,500 yen for a four-pack. I like it because it is beautiful, gorgeous and tasty. At the end, I asked Mr. Hatada, the brewer of HATADA☆SHAKE, how to open a bottle without blowing it up, and he told me it would definitely blow up. Kami Kaiki, awesome 🥳.

Participated in the Spring Tokaido Sake Brewery Tour, a brewery opening of six sake breweries in Shiga Prefecture. The local kuzo and his wife gave us a ride in their car and we toured the breweries with bouken. They were very helpful🙏. Shiga Prefecture brewery tour (1) Fujimoto Sake Brewery I am a fan of this brewery, so I wore my Kamikai T-shirt over my shirt to the tasting area. I was wearing the same outfit as the brewery staff, so when I went to get a tasting cup, the woman in charge of the tasting gave me a "What? I said 😅"Right" and she laughed and said "I thought you were a member of our staff" 😁Nobuyuki Fujimoto, the toji of the brewery, who was standing beside me, said "You are a member of the Jinkai family" and I was so excited 🤩"Yes, I am a member of our family". I said "Yes, I'm a member of the family" and he said "Please take it easy today" in a friendly manner, and then he told me I could be part of the family 🙏 Thank you very much! Tokaido Sake Brewery Tour in Spring (2) I had to split this post because it was over the number of characters 💦. Junmai Daiginjo Shizuku Shisui A premium sake for a paid tasting. It is a beautiful sake, but I was a little bothered by its peculiar taste 🤔. Junmai Daiginjo Miyano Shiki This is also a paid tasting. Gorgeous and beautiful sake. I prefer it to Murasaki water. The brewer, Mr. Hatada, was at the booth for the paid tasting, and Nemuchi asked him how to open HATADA SHAKE well. He said it is impossible to open it without spurting 🤣. All three of us bought Hatada-san's limited edition sake at this brewery 😊. We had a chicken sandwich at a Peruvian restaurant 😋! The free tasting system at this brewery was to pour the sake yourself, so I poured more than I should have, and I regretted that I skipped too much from the first brewery... I was sorry that I poured too much and skipped the first tasting........ I forgot to write something important! When we arrived at the brewery, Nemuchi-san was wearing a Kamikai T-shirt and the brewer called us a family 🤣.

Tokaido Sake Brewery Tour in Spring (1) I joined this tour with Mr. Kyukura and Ms. Nemuchi! We met at Moriyama Station and were driven by Kyukura-san's wife to visit each brewery. The first brewery was Fujimoto Sake Brewery, which joined the tour for the first time. The first brewery was Fujimoto Sake Brewery, a newcomer to the tour, and it was relatively deserted, probably because it was just after the tour started. We drank Mizuikyo Kugo-gou Junmai Nama-zake It tasted as good as the one we drank at home. Rare cheesecake 😋. Koji-mashimashi-gou Junmai Nama-nihonshu Yamada Nishiki. It has a strong sweet taste and a thick flavor. I wondered if I should buy it, but I could still buy it at a liquor store even if I didn't buy it here, so I didn't this time. KT-901 Junmai Namaisake Yamada-nishiki. It uses a yeast that produces a lot of succinic acid and malic acid. It was not so sweet but tasted delicious with a strong umami flavor. I could understand why they call it "dashi" 🤣. Harusame Junmai Ginjo Hitohi Ginbuki. Unlike the first three, it has a modern, up-to-date feel. It was fire-aged, but it was fresh, sweet, and delicious! Aw Aw Aw Aw Junmai Nama Nama Sake Sake made by the brewer, Mr. Hatada. It is made from Yamada Nishiki. It is extremely sweet and sour. The sourness is more assertive than the sweetness. Rin Junmai Namaigahara Nihonbare. This was also sweet, tasty, and easy to drink. Very dry junmai namaeshu Sake meter rating +20, Yamadanishiki. YASUBAE Today we came to the Tokaido Sake Brewery Festival in Shiga Prefecture 😀 Thankfully, Kyuzo-san, the head of the Shiga Branch, provided us with a car. Thankfully, the Shiga branch manager, Kyukura-san, provided us with a car and Rafa papa, who attended last year's festival, was our guide. We were able to complete the full tour of the 6 breweries and the main venue without incident 😀 Thank you so much to both of you! Thank you so much to both of you 🙏! We were able to sample many delicious sakes for free at Laughing Four Seasons and other breweries, but the best tasting was the paid comparison of two different Junmai Daiginjos by Shinkai 😀 I've never had a chance to drink Shinkai before. I've never had any of Jinkai's sake before, but I'd like to try it at home someday 😇. Thank you so much, Kyuzo, for being our handle keeper 🙇.

Hi Pon-chan 😀 I had enough time to enjoy the sake breweries in Shiga 😀. We had two great guides who taught us a lot of things so we didn't miss anything 😀. I hope to go to the Shiga brewery open next year too😇.
