Shinkai Tasting Sake, Koji Mashimashi. President Fujimoto loves a certain type of ramen, and the koji mashimashi was started 🤣. We will have it with cold sake. The color is clear, but you can see the pale yellow color. The top-tasting aroma is very unique and hard to describe. It has a caramel-like aroma, and for my taste, it smells a bit like flowers. The mouthfeel is oily and thick. The taste is bitter as soon as it flows onto the tongue, followed by the sweetness of concentrated amino acids. Taste-wise, it's mellow, but it also seems nutty and berry-like... 🤔... it's indescribably complex. It's strange that it's not aged, but it has a caramel-like quality to it. On the back label. It doesn't say it, but it's an active raw sake, and I bought a two-year-old sake at half price. It didn't spurt because of the hole in the stopper😅. I'm not sure if it has changed in 2 years, but it has a unique and interesting taste. It's like an orchid without the graininess and complexity 😁. I think Kamikai is also a treasure trove of weird sake 🤔.

Koka, Shiga Prefecture. Fujimoto Sake Brewery Co. SHINKAI SPARKLING NABEKANMURAI CHOJO The illustration on the label reminds me of a Showa-era anime. I had always been curious about it, and since it was a Kamikai sake, I bought it immediately. I was told it would definitely spurt, but I won't let it spurt while my eyes are black 👀. But it took me a bit of time to open the bottle because it's hard to see the bubbles in the blue bottle 😅... I'll have it cold. When I poured it into the glass, there were quite a lot of bubbles on it. The color is a milky white color from the automatic stirring. The top aroma is a mixture of grapefruit and mint. The mouthfeel is slightly effervescent. The first impression on the palate is sweet and sour. The sweetness and sourness are well-balanced and evenly matched. It is a low-alcohol, petit-swirl grapefruit drink. But I can properly taste the rice flavor as well. I can also taste a little bitterness, but it doesn't bother me at all. And the aftertaste is long and sweet and sour. It's kind of delicious. Every time I drink this 💘, it hits me right in the heart! I'm becoming quite a fan 🥰.
