I was talking with the person next to me about how good the sake from Fukushima is.
The name was derived from the phrase "sake brewing is romantic" and the character "Ichi-go," which indicates the number of brewing, which can be read as "Hitoroman (one romance).
In addition to the normal three-stage brewing process, all of our sake is brewed with glutinous rice in a four-stage process, which involves the use of glutinous rice for the fourth stage.
Rice used: Gohyakumangoku (Koji rice), Yumenokou (Kake rice), Himenomochi (Four-stage rice)
Rice polishing ratio: 55%, Yeast: Utsukushima Yume Yeast, Alcohol level: 15
Slightly sweet with a melon-like aroma.
It also has a bitter aftertaste.
The sweetness of boiled peas (🫛) would go well with it. It would also go well with fried tofu and mitsuba (mitsuba) ☘️
The aroma is slightly unripe and fruity.
In the mouth, sweetness comes first, but it is light.
The acidity is moderate. The umami is also light.
Overall, the impression is fresh and refreshing.

This bottle caught my attention at a store we stopped at on the way to Hinoemata. The aroma is faintly banana, and the mouthfeel is quite mild. It is sweet, but the aftertaste disappears quickly, and even I, who like dry sake, can drink it easily.
I bought it without knowing the details, but it is a limited-edition blended sake. I would like to buy it again next season if I see it!
