This is a hiyaoroshi version of the special junmai we had earlier.
I think I like it better when it's not hiyaoroshi because it's a bit messy.
TAIYOMORI Junmai Ginjo
Slightly sweet and less spicy than the others.
Koshino-Matsudoro Special Honjozo
Too light and refreshing for this type, but not enough.
Maybe not my favorite, but I'd like to try some of the raw sake here 🤔.
Lightly-sweetened, aromatic sake
It has a good balance between the umami of rice and elegant sweetness.
The rich aroma of Koshitanrei, elegant sweetness, and slight acidity are pleasant.
Promotional sake for Taiyozakari. This should also be limited to Niigata Prefecture.
The flavor of Koshitanrei stands out!

This sake commemorates the 120th anniversary of the opening of Senami Onsen Hot Spring.
I am not a fan of regular Taiyozakari, but this sake is fruity and easy to drink. The aroma is not strong and refreshing. It is gentle on the throat and has a clean aftertaste!
It has a sweet taste, so you can choose what to serve with it, but for sashimi and other dishes, I think dry sake is better!
But it is not bad as a food sake.
It tastes so good that you can drink it like water.

There are two breweries in Murakami city, Miyao Shuzo famous for its Shimeharizuru and Taiyo Shuzo for its Taiyozakari.
Both are good sake, but I like Taiyomori now. ❤️

The kanji "Taiyou-zakari" in hiragana, with the word "Kyojozo" written in a masterful hand on a lightly wavy background, is very cool.
