The aroma is mild and slightly sweet. The slightly chili water, which is unique to Hachisen, brings a calmness to the taste, with a moderate sweetness of kyoho grapes, a soothing umami, a little sourness, and a chili gasiness. As always, Hachisen has a flavor that makes you want to pair it with squid. However, when I tried it again, I could feel the sweetness more strongly. I have changed, too. The ginjo aroma is subdued but has a freshness of blue fruits. The taste is light and refreshing with a restrained balance of acidity and sweetness. However, a peculiar sweetness lingers in the aftertaste, giving it a kind of flirtatiousness. Is this a timeless approach by a classical brewer to a modern one? I would like to ask the master brewer (in a positive sense).

Taking advantage of the Obon vacation, we are challenging the Kanagawa Sake Brewery Tour Stamp Rally.
We went to an izakaya in front of Hon Atsugi Station in search of Kanagawa's local sake. The food was delicious and the sake was very good, with a selection of famous and rare brands.
However, there was not a single local sake from Kanagawa. There is nothing wrong with the restaurant! It was just my own expectations!

Mutsu Hachisen's special junmai since Natsu Doburokku. The aroma is mild, with a green apple aroma. It has a good balance of sweetness, umami, and acidity, making it an easy-drinking sake. It is easy to pair with meals.
The brewer is Hachinohe Shuzo in Aomori Prefecture. Mutsu Hachisen is the main brand, replacing Mutsu Otokoyama, the founding brand.
The raw material rice is Mutsuhomare, the rice polishing ratio is 60%, the sake degree is +3 degrees, the acidity is 1.4, and the alcohol content is 15%.
