This sake is made from Yamadanishiki produced in Sagamihara.
We also had the unfiltered version, but this one was fire-brewed.
I had an image of Yamada-Nishiki as being sweet, but the flavor was mellow and full-bodied.

Clear, sharp and dry. This is the most popular dry junmai of Kubota Shuzo's Sagaminada. It is said to have a perfect balance of aroma and flavor, with a taste that not only cleanses clean dishes, but also washes away even slightly fussy foods!

Sourness and bitterness come last, and there is not much sweetness throughout.
As you drink it, there is a mild and reserved ginjo aroma that is typical of No. 9 yeast. It also has a crisp and clean finish ✨.
We paired it with raw firefly squid with soy sauce. The soy sauce flavor is very pronounced and the sake goes well with such a peculiar entrée👍.

It is more smooth than the previous one, and the sweetness seems to increase as you drink it. It's delicious.
I went to visit the Sagaminada Sake Brewery.
It was a 30-minute bus ride from Hashimoto Station, and the brewery was tucked away in the mountains beyond the Shiroyama Dam.
The brewery was a quaint one that looked like it had been there since the Edo period.
Since it was a weekday, we were the only visitors, and we were given a slow and detailed explanation of the brewery.
The brewery is family-run and produces a small amount of sake, so they seem to be particular about bottling and storage.
We were allowed to taste 11 different kinds of wine for the tour fee only.
Yamadanishiki, Omachi rice, Miyamanishiki, and various other rice varieties were available.
All of them were refreshing and easy to drink.
They were not gorgeous with aroma, but they seemed to go well with any dishes.

Sagaminada special honjozo from Kanagawa Prefecture was the last order. As expected from a special honjozo, it is very light and crisp. This lightness is a flavor that can be produced only with aluzoe.
