Tonight, open this bottle from Gunma Sake no Sei 💁.
Saint EVOKE Yamadanishiki Unfiltered Unrefined Nama Sake 2024BY✨.
This is a different line of sake from the usual Hizirizm.
I imagined it would be easy to drink since it is an unfiltered, unfiltered, raw Yamadanishiki sake, but from the nose, it has nuances of aged tortoise-shell candy. I was a little surprised at the hard-boiled quality of the sake.
It is suitable as a food sake, and it seems to be good when it is heated up, as it becomes more rounded and fuller 🍶 It has a so-so character when served cold on its own. ☺️
7/10
This was also delicious.
Unfiltered, raw sake made with Hitomebore from St.
Second fermentation in the bottle, strong gassy sake with a crazy apple aroma.
I thought it would be like a juice, but the bitterness in the latter half of the flavor stood out and I liked it a lot.
Saint is a sake I would like to drink if I see it again.
The aroma is characterized by a lactic acidic aroma drink that is typical of lemon and namaoto, a sweet and sour taste reminiscent of lactic acid beverages, and a pleasant gaseous taste.
After a thick sweetness, acidity, and umami, it finishes with a refreshing grapefruit-like acidity and bitterness.

It's a test brew, so it's a little out of the ordinary," said the shopkeeper.
It tastes like a blue plum wine, with a little bit of ash.
Sweet and sour. Maybe some passion fruit.
It has an astringent texture like a white wine with a lot of body.
Strong acidity, but with a sweet-sour consistency.
The finish is fast.
Yes, it's unusual, but
I am surprised at how good it is.
My favorite 3.5/5
Dry mouthfeel with fresh gas and acidity. Banana-type fruity and a hint of sweetness also gently wafts through the nose. Juicy and delicious!
Sake rice → 100% Yamadanishiki from Hyogo Prefecture

Alcohol content→15
It is from a liquor store's hanpukai.
The nose is grape and sour.
When you drink it, there is a fresh piquancy, with full-bodied grapes and umami. It feels sweet but crisp at the end.
Personally, I would like to pair it with dark snacks because of its sweetness.
After a few days, it still has a grape taste, and maybe some honey apple. The sweetness spreads out. It ends crisply, so it's not clingy.
Although I am not a perfect fan of this style of wine, I enjoyed this wine because it is rich but also has a refreshing feeling.
A record of haste. Today's closing. Delicious. To begin with, they had Jikin, Jyushiyo, and Tasake on the menu. It's an amazing restaurant. But I didn't dare to choose one. There are many good sake.
