Zenchidori is an obfuscated Japanese sake, but I was able to say "Utou, please" correctly 🤣.
While pouring it for me, an elderly lady asked me "Which one is Utou? I said "Oh, this one was delicious" and she asked "Which one was the best? She asked me 🤣.
With all these delicious drinks, that's the hardest question to answer 😱.

The top-tasting aroma was a sweet smelling ginjo aroma, starting with a soft and gentle sweetness, and finishing with a sweetness that also tightens up from the sweetness. It seemed to be a gentle sweetness all the way through.

I rarely buy daiginjo’s due to the price tag and light flavor profile. But the sweetness and ricey umami notes in this one did not disappoint. Great on its own and with sashimi. 4.25/5
Yamadanishiki Polishing ratio 40
This is the second time I've tasted it, and I enjoyed it again 🥹.
It is alsobeared, but the complex umami and the fresh fruitiness are well mixed! It is melon-like, pineapple-like, and apple-like. It has a strange aftertaste that I have never felt anywhere else, and it is elegant. No wonder it is so expensive...
Third drink at an izakaya in Sendai. I had never had it before, so I gave it a try. It is a slightly sweet sake with a strong umami flavor. It was not too harsh and tasted good.
Aomori's Zenchidori (Utou). I drank it for the first time. Daiginjo with a rice polishing ratio of 40%. It is not junmai. But it is delicious. It has a complex taste. After all, there are many kinds of sake, such as ginjo and junmai, but it is good to drink sake that you feel delicious.

Zenchidori is a rare sake brewed by Nishida Shuzo, famous for its rice wine. Its name comes from the Zenchidori bird, which is a national natural treasure.
Only the heart white of the Yamada-Nishiki is used, polished to 40%, and the pressing is done without artificial stress.
It has a sweet, yet refined ginjo aroma like melon, and a very clear taste with a gentle sweetness and no hint of cloying flavors.
When served heated two weeks after being uncorked, the fruity aroma becomes more pronounced and the umami flavor spreads!
It still has more umami and sweetness than the one hundred and forty-four I drank the other day.
