I guess I don't need to tell you. Yum😋. Among the 40%-5% series of this Tasake, Yamada-Nishiki is the best. Yamada-Nishiki is a truly well-balanced sake.

This year's AQE is also interesting. It has a lot of acidity and a lightness that is not typical of rice wine. It is easy to drink. Of course, I'm buying it so I can savor it later!

Maybe it was the rice (Aizan) or the rice polishing ratio (90), but I thought it was quite a distinctive sake with a taste I had never had before! As I am still a beginner, I could only taste the difference between fruity, sweet, and dry sake, but this was the first sake that made me realize that there are so many different tastes in sake. It wasn't something I wanted to drink a lot of, but I got the impression that it wasn't a complete failure.

sake park When I asked the people at Kamikawa Taisetsu, they told me to try this one first, and I tried it, and I personally liked it a lot! It can be drunk on its own and goes well with any meal! It's not the kind of sake that you are forced to drink, but more like the sake that you are supposed to drink. I would recommend this kind of sake to anyone who is just starting to get into sake.

My first Mutsu Hachisen sparkling. It has almost no sake flavor. The bubbles are so fine, they're almost like rice champagne. The fine bubbles are exactly like rice champagne. It is DRY and has a strong acidity, but it is easy to drink.

It was like a "Hiran", which I had never had before. It's a limited pressing, but the sweetness and sourness nuances are a little off. The nuance of sweetness and sourness are a little bit different from each other. I don't know how to describe it. It was totally different from Prototype D.
