It is a delicious sake with a depth typical of Sawanoi.
I visited Sawanoi on my way home from a visit to Ontake.
I bought some sake and tofu at the Magoto Teahouse and decided to have it with yudofu for the first time this season.
I tried the hiya and the warm sake recommended by the sales clerk.
I started with the hiya. It went in quickly and easily. It was delicious and rich!
Next, we warmed it up. The aroma was more vibrant.
We also added buckwheat miso as a side dish. We enjoyed an endless loop of the soba miso with the yuzu pepper on top of the tofu.
Junmai Ginjo Nama-nama sake from Sawanoi. It has a fruity ginjo aroma with a slight graininess. The strong acidity and sweetness give it the freshness and juiciness that is typical of namaiginjo-namaishu. The astringent taste on the back end is also strong and very tasty.
Sawanoi Junmai Hiyoroshi. I wonder if hiyaoroshi means "freshly grated"? There is no particular label for it, but...
The aroma is mild rice. The umami is fully expressed, which is typical of autumn sake, but I think I prefer it a little sweeter. If I warmed it up to lukewarm, the flavor and aroma might have opened up a little more. I ended up drinking all of it cold because of the lingering summer heat. What a waste!
Sawanoi's sake recommended for soda. This is the second stage following Tama boast which we drank the other day. It has a slightly old-fashioned sake aroma. It has a stronger impression of sake than Tama boast. I think it would be good heated up as it is. Kaisen is probably the strongest sake. I want to drink it before it gets cold.
Sawanoi's raw sake. It has a refreshing grapefruit-like aroma with moderate acidity and sweetness. It also has a slightly strong bitterness. Since it is a local sake of Tokyo, I wish it would be distributed more in the city. It seems to be sold well in the so-called Tokyo area, but it is really regrettable that there are not many liquor stores near me that carry it.
