A slight fever and cough prevented me from attending a drinking party with my juniors. However, I have an appetite, which is frustrating.
Well, it's a sad start, but I couldn't wait to open the bottle while making dinner to recover from the miraculous food wine relay ❗️, or should I say, ❗️!
This is my first Takasago ✨.
I had read in various reviews that it was dry and suitable for a food sake, but when I opened the bottle, I was pleasantly surprised by the ginjo aroma. It's much more fruity than ‼️ imagined 🍎🥝and a little bit gassy because it's just been opened. It is a bit gassy because it is freshly opened, but from one moment to the next, it is filled with a cascade of acidity that is like a fresh yeast yeast stock. As if dancing on top of it, there is the umami and astringency of rice from the mid-palate, then bitterness on the tongue in the second half, and finally the umami and sweetness of rice lingering in the aftertaste.
And this is all so wonderfully balanced in such a short time that it makes you want to drink the next one again💦.
Totally enjoyable on its own😵.
