The taste is strong and mild. Strong.
Suitable for dipping. Is hiyaoroshi kept at room temperature? I don't dislike it, and this is the first hiyaoroshi I've had to my liking.

The third cup in the drinking comparison was a junmai ginjo from Toruyoemon, a famous Iwate sake.
It had a beautiful acidity and was well chilled, so I drank it quickly! 😱

Last year, we had a bumper crop of matsutake mushrooms despite the heat wave.

The blue bottle with a summer night sky label is very cool. It was so refreshing that it was hard to believe it was a +9 sake, and the moderate acidity kept me from getting tired of it.
