First, cold, you can feel the richness that is typical of classic Junmai!
Next, warmed sake!
The umami flavor comes through as the temperature rises! But it didn't have the 🌰 feel I like in heated sake, so I think I prefer Hanagaki for heated sake.
Now that I've learned how to warm it up, I'd like to try the popular Namahashime Junmai and Yamahai Junmai!

I like it very much. This nigorigo sake is not fizzy, so it is safe to open.

The aroma is not spectacular, but the soft aroma spreads softly.
It has a slightly thickened mouthfeel with rice flavor and acidity, and a light sense of maturity flows over the tongue.
The final finish is crisp, giving the impression that the sake is light and easy to drink despite its robust flavor.

Souvenir of my trip to Fukui (6)
I felt Kuroryu Ginpu was too sweet, so I wanted a dry sake, so I opened a bottle of this last souvenir from Fukui.
I was pressed for time to visit Echizen Ono Castle, which is one of the 100 most famous castles in Japan, so I took the shortest route up the stairs, visited the castle, and descended in 10 minutes each.
I had given up, but on the way back, Jive told me about a sake store called "Echizen Sake Shop Hayashi" where I could buy some sake 🙂.
There was another sake I wanted to buy, but I already had 7 four-packs in the car including souvenirs... I had no choice but to buy one 😅.
It's dry and tasty, but it's not light and dry, it's a bit heavy and bitter. It is a bit heavy and bitter 😊.
It would be delicious warmed up 😋.
