It has a light mouthfeel with a hint of fizziness, and a soft umami flavor that quickly spreads in the mouth.
The aftertaste is clean and crisp with just a hint of bitterness.
It is not spectacular, but it is refreshing and cozy.
I have not been able to drink sake for a while due to poor health. It has been a long time since I have had sake.
Soft on the palate, smooth in the mouth, not austere but with an austere aroma. It seems to go well with a variety of meals.
The intoxicating aroma is intoxicating, and the acidity and umami are well balanced, making it a refreshing sake. We drank it cold, but we think it is also delicious warmed.
There was a product exhibition at SL Plaza in Shimbashi.
I found a booth in Yamagata and had a little drink.
It is made from Shonai rice, Kame-no-o, but it is a Fukui sake.
It has a smoothness that is typical of unfiltered, unpasteurized sake.
It was hard to believe it was junmai sake.
It was full-bodied and delicious.
I paired it with grilled scallops.
It was the kind of "hiyaoroshi" sake I envisioned.
Basically, it has a classic firm sake quality.
The acidity was present for a moment along with a banana-like fruitiness, leading to a gentle aftertaste. 〰︎〰︎
Freshness and maturity coexist (in a very good way), similar to Niigata sake, giving the impression that it is a hiyaoroshi from Hokuriku: ☺️
While some hiyaoroshi can be harsh, it goes well with food and you don't get tired of drinking it.
I was going to warm it up, but I drank it 💦.
I'll enjoy it next season 🍁.
[The 2nd Bishu Competition Tasting
Returning to the "Jizake Tourism" side again, we had a sake tasting with Fukui's sake.
Hanagaki Junmai Daiginjo stored in oak barrels.
The aroma of well-aged rice, the smooth mouthfeel, and the strong acidity that contrasts with the full-bodied, crisp, and refreshing aftertaste........
The full-bodied flavor is typical of Hanagaki, but the umami is stronger than the sweetness.
It's spicy because I like sweet! I thought it was spicy,
But it goes well with soba noodles!
I'm eating Natto Soba
I like Wasabi, Ichi-mi, Japanese hot pepper, Yuzu-kosho, or...
I'm not a musician, so they all taste good!
I thought the raayu was a little bit different

Sake series that is too cosy
The Hanagaki series never goes out of style and is always cosy, but this one is a rare find according to the sake shop owner.
According to the owner of the sake shop, this one is a rarity.
It has a good balance of aroma and flavor, and even though it is not a ginjo, it is easy to drink and has a pleasant lingering aroma, which I think is the fruit of the sake brewery's efforts.
I'm rattling on, but I simply love this sake.
