Purchased at Sake-no-Oyama in Joetsu City in July.
I rescued a spring sake that was left behind in the summer.
I don't usually drink this brewery, but I picked it up because it is made from 100% Koshitanrei sake produced in Kakizaki.
Pouring it into a glass, I noticed that it was slightly colored.
The top rise is gentle, but the aroma is of rich rice. Perhaps it is because it was bottled in February, but it seems to have become richer than the original flavor with the passage of time, though not as much as the matured aroma.
When you drink it, it has a robust Koshitanrei flavor! There is almost no sweetness, and you can feel the rice straight away. The passage of time also gives the impression that the umami has increased.
The alcohol-derived acidity tightens the overall flavor.
Since it is unfiltered, it is fresh and easy to drink.
When asked what the umami of rice tastes like, this sake is the first to answer. I would like to be the first to offer this sake when asked what the umami of rice tastes like.
It is not just sweet and tasty, but tasty and delicious.
I have found the next best Koshitanrei sake after Yukihonbai and Kaminari.
Koshitanrei is the best!

Oh, the label of Yuki (YUKI) has changed.
Like "Kaze" and "Sora" in the Yaeguhiki series, the design is based on white, with a thicker material that gives a softer impression. The name "Yuki" is a summer sake of Yaeguhiki. Snow in summer.
Until last year, Snow was a junmai ginjo made from Koshitanrei, but it is now a junmai daiginjo made from Yamada-nishiki. It is said that this is the only year that snow is brewed with Yamadanishiki. We bought it immediately without hesitation.

Hachiekubiki is a series of wines that expresses the local Kakizaki's feelings toward its eight blessings: the sun (yang), water, earth, air, wind, forests (trees), snow, and people. It has been quite a while since its release, but still no water, trees, or people. I'm looking forward to it.

This is the second in a series of ordered alcoholic beverages.
I drank it to study it, as it is another brand of Kubiki Shuzo from the Koshiji-no-Kenbai series.
What a surprise! This is delicious! It is very tasty.
It is the cheapest grade in the Kubiki series, but it was extremely refreshing, with a nice aroma and a smooth taste.
I brought it with me on a camping trip and drank it all by myself within a few hours.
