Seikagami that seems to be the first time for some reason.
Sake of the unpolished type.
It doesn't have the Hiroshima dryness that I imagine, but it has a complex taste that comes later.
I'm not sure if the complexity is due to the unpolished nature of the sake or the omachi character, but it's delicious!
It was recommended to me by my favorite liquor store as being outstandingly delicious ❗I had an image of Seikagami as being clean and dry, but it was delicious ✨It was fruity without being flashy, with a strong sake flavor, plenty of umami, a pleasant bitterness, and a good sharpness ✨It was delicious 😋.
Sake rice: Omachi (Polishing ratio 80%)
Yeast: 1901*.
It has been a long time since I have had Seikagami. It was rich and delicious!
*The following is from SAKETIMES
The latest yeast developed by the Association in 2014.
Sake is now attracting attention from around the world, and exports are increasing rapidly.
On the other hand, a substance called ethyl carbamate, which is found naturally in fermented foods, has been designated by an international organization as a "possibly carcinogenic substance.
Sake also contains a very small amount of this substance.
It is formed when alcohol reacts with urea produced by yeast.
Although the amount of urea contained in sake is not higher than that of other alcohols, if international regulations become stricter in the future, there is a possibility that sake may be shut out of the market in the country where it is produced.
Therefore, JIFA developed "Urea Non-Producing Yeast No. 1901 (KArg1901)" as a yeast that does not produce urea in the brewing process and achieves excellent sake quality, using technology developed at the National Brewers Research Institute of the National Tax Administration Agency (now the Japan Liquor Research Institute) from the high ethyl caproate-producing No. 1801.

Hiroshimaya Gihachi Junmai Omachi Nama Sake

Asahiya Sake Shop
2999 yen
Asahiya Sake Brewery's original Omachi draft sake brewed by Takehara Seikagami's brewery. It has a sweet aroma like Japanese pear and a soft mouthfeel. It has a soft mouthfeel with a sweet aroma like a Japanese pear and little acidity, and a rich and slightly bitter finish.
I had avoided it since the last time I tasted it because I did not like the flavor, but since I was able to taste it, I bought it to confirm the flavor. It was my first Hiroshima sake in a long time, and it was delicious.
