The aroma is slightly fruity.
The color is beautiful.
The mouthfeel is very refreshing and easy to drink.
The first half of the bottle had a slightly cloying taste, but in the middle I could taste the sweetness of the rice.
Overall, I thought it was a good sake with depth.

Hachibei Nero Nama Sake
When I went to buy some sake I wanted in the Suita area, I stopped by a liquor store I had never been to before and bought it. It was a liquor store that seemed to be strong in whiskey.
The black cat label is impressive and nice.
I had it cold.
The color is clear and the yellowish taste is clearly visible.
The top aroma is mild and not so much.
The clear mouthfeel is followed by a citrusy acidity that spreads throughout the entire palate. The acidity is followed by a firm bitterness and astringency. There is a lingering tingling sensation on the tongue. The sweet and umami flavors are not too assertive, but have a grain-like profile.
The owner of the liquor store said it was fruity, but it doesn't feel like that, but maybe that's because it's been six months 🤔.
In total, the sake gave a bitter impression.
Ingredients: Rice (domestic), Rice malt (domestic)
Rice varieties: Ise-Nishiki, Yamadanishiki
Rice polishing ratio: 80
Alcohol content: 15%.
Sweetness and depth of rice. It has a light acidity that makes it feel sharp. Although it is a raw sake, it is 15%, so it does not feel harsh, delicious, recommended.
This label caught my eye at the liquor store.
The message on the back of the label reads, "More than a glass of sparkling wine, a night of peace". The brewery is located in Mie Prefecture.
When you put it in your mouth, a pleasant acidity spreads softly, and a hint of sweetness comes slowly in the aftertaste. It is a summer sake with a refreshing taste.
We enjoyed it with Spanish mackerel sashimi.

The aroma is only faintly perceptible, and the taste is dry with a crisp acidity.

This is Hachibei's seasonal sake.
It was quite mild and flavorful, a sake that could be drunk slowly.
It may be austere in taste, but it is a very good sake.
It has a slightly sweet aroma, and the mouthfeel is moderately sweet, with a slightly stronger acidity. It has a strong junmai taste with a firm aftertaste.
It has a strong sake taste.
It is highly recommended as a food sake, and goes very well with oily foods such as tempura, and dishes with strong flavors.
