ワカ太Four types of yeast and koji are brewed by "Shirakiku" in Kyoto. This sake, which is nothing but individuality, is made with four types of yeast and koji, including black koji, white koji, and miso koji. The yeast is also a blend of four types of Kyoto yeast: "Kyo no Hana," "Kyo no Saku," "Kyo no Haku," and "Kyo no Koi. Just from the description alone, I already have no idea what kind of flavor it is 💦. Well, take a sip. Sweet ⁉️ aroma is fresh at first, then melon. It tastes sour and ricey with a hint of richness. But eventually the green apple also comes out, and the complexity soaks into the body with a pleasant, not unpleasant mouthfeel. Delicious ❣️ but complex 💦. I was deeply convinced that it was named after the monster in the Tale of the Heike, the White White White Lion.

Tomo-kichiThe black mirror on the label is the very mirror of the witch in Snow White? The taste is sweet and sour and amazingly juicy apple 🍎. The citric acidity of the black malted rice is very effective 😃. Shirokikyu is a playful and fun brand.

KTK2002. I bought it thinking that there was a chimera before. Chimera is 3 kinds, this time 4 kinds of koji and yeast, so 鵺. Narhodo🧐. The aroma is fresh and sweet with a slight rummy note. The taste is slightly sweet and sour like apple🍎 and pear🍐. The aftertaste has a hint of melon-like sweetness. I thought it was mildly acidic for a Shirokikyu, but the next day the acidity became stronger. However, after a few days, the sourness settles down again, so if you like sourness, drink it as soon as possible 😄.

グラExcellent taste. Not much aroma. Slightly effervescent. It is juicy and has a good citrus sweetness. I recommend it. The owner of the store where we bought it said that the secret of its flavor may be the edible rice called Shunyo.

That's what Shiraki Hisashi is all about ✨. After wondering what to have with the entrée, I decided to go back to my roots with the Camembert! The sweetness of honey and black pepper The sweetness of honey and black pepper adds a nice spicy accent. As if that wasn't enough, we added some thick Neapolitan noodles! I had it with plenty of Tabasco on top 😊. Seven's pasta is so good!

I was kind of put off drinking it, but in the meantime, I saw some people giving comments about drinking it at Sake-no-wa, and I thought, "Oh yeah, I can't imagine what it is. Shirakikyu Honey Drop Softer than I imagined. But it has acidity and freshness. A little squashy on the palate It has sweetness too. Certainly, if you say it's like honey lemon, it is like that lol It says "black malted rice - yellow malted rice", but is this a 4-stage brewing instead of 3-stage?

たけっちShirakikyu Kinshari Junmai Daiginjo On the Shinkansen back to Tokyo. It was purchased at Tomiya in Kyoto Station. It is served with a yakiniku bento box from Hiroshi Yakiniku Restaurant in Kyoto. The color appears to be faintly yellowish. The aroma is elegant and gorgeously sweet. The taste is also sweet, but the aftertaste is clean and dry. I was a little impressed that this flavor could be made from Sasanishiki. Next time, I would definitely like to try the raw sake.

アラジンContinuing with the sake we had at Nihonshu Shika, a sake bar in Naramachi. This is the second surprise sake from the Shirasugi Sake Brewery, Honey Drop. The label design looks like a bee with yellow and black stripes, but this is a reference to the sake's brewing process, which is a four-stage brewing process, with black koji for the mother, second and fourth stages, and yellow koji for the first and third stages 😳. How did they come up with that 🤔. By the way, until last year, the brand name was Honey Trap, but this year it was changed to Honey Drop 😅. The yeast used is Kyokai 1801 yeast, but I don't feel that much Kamitatekko. The taste is sweet and sour with a touch of rice on the back end. It has a sake strength of -25 and an acidity of 3.5, so as you can already tell, it is a honey lemon 🍯🍋 sake with an irresistible sweet and sour taste. I even felt a little crispy because I drank it after the Zyu with a sake level of -35 and an acidity of 3.5 😅. Shirasugi Shuzo is one of my favorite breweries that always produces interesting sake. Thank you for the treat 🍶.

アラジンSake served at Nihonshu Shika, a sake bar in Naramachi. It is a surprise sake from the Shirasugi Sake Brewery called Nue. Chimera," made with three types of koji and three types of yeast, is very popular at Shirasugi Shuzo, but this Nue is brewed with four types of koji and four types of Kyoto yeast 😳. Chimera is a fusion of lion, goat, and snake, and 鵺 is a fusion of monkey, raccoon dog, tiger, and snake, both imaginary beasts. The koji used in 鵺's brewing is a blend of four types of koji (white, black, and yellow koji plus mirin koji😳), and four of the five types of Kyoto yeast, except for "Kyo no Koto". The sake rice is 100% Koshihikari since this is a rice brewery 🌾. I have never heard of a sake like this and have no idea how it would turn out 🤔 The slightly loose-looking sphinx on the label was designed by Toji Satoru Shirasugi. When you drink it, the sweet and sour taste in the beginning is typical of the Shirasugi brewery. From the middle part of the bottle, you will feel a rather complex aftertaste. It was a delicious sake, with a rich flavor for those who like complexity, and for those who don't, the sweet and sourness made it easy to drink. By the way, I asked Mr. Tadatsu of Shirasugi Shuzo to eventually brew "Yamata no Orochi" using 9 types of koji and 9 types of yeast! I asked him to do so 😁.
