4.25+/5 100th check-in! Pear, walnut, licorice, brown sugar. Delicate but with a bit of heft towards the end. Lightly sweet with a touch of acidity. Nutty, molassesy bitterness, but not too strong. Slightly creamy. The dusky pink color is a fun bonus! Apparently from using black rice. The lack of Japanese on the label makes it look a bit less legit/quality, but I know this is a good brewery. But I searched in Japanese to try to find this product and I can’t find a version marketed there.

4.25/5 Light, sweet, and delicate. Milk chocolate, coconut, cantaloupe, marzipan, chamomile. Medium-low sweetness, a bit of bitterness, faint acidity. Good flavors and well balanced. Been drinking it for a few days and I think it’s already smoothed out a bit more. But it does have a bit of sharpness despite the lightness. A pinch more acidity might be nice. Apparently it’s also a yamahai, but the bottle doesn’t mention it.

3.5/5 Lightly sweet and quite tangy. Pear, green apple, marzipan, chamomile. Pretty high acidity, maybe a little too high. Usually I really like acidity in saké but this one lacks the depth and delicacy that usually goes along with that to balance it, and it leaves a bit of an aftertaste. The flavors aren’t bad, but I was surprised that I didn’t enjoy it that much. The bears are fun though!

4.25+/5 Really nice stuff. Slightly off-dry, just a gentle sweetness and a good amount of acidity. Yellow apple, pear, raw almond, coconut, stone. Fruity flavors with a gentle creaminess and nuttiness is really nice. Clean finish, the acidity is a bit refreshing, and it goes well with food!

4.25+/5 Fairly dry with a nice bit of acidity. Pear, lime, coconut, raw almond. There’s just a tiny hint of sweetness but it isn’t too strongly dry either. Love the bit of acidity on this and the bright fruity flavors.

4.5/5 Slightly sweet, but full of savory flavor. Salted caramel, Brazil nuts, shiitake, hay. It’s nutty and earthy with a little bit of saline and acidity. The mushroomy flavor is really nice and creates an interesting combination with the sweetness. Goes particularly well with some savory snacks.

4.5/5 Really nice stuff. Very light but full of delicious delicate flavor. Yoghurt, strawberry, almond paste, coconut, stone. A little hint of sweetness and acidity, even less bitterness. Really smooth and light. Gentle but there’s a little kick at the end. The subtle creaminess is also really nice.

Smooth with a bit of bitterness on the finish. Been drinking this over the course of at least two weeks and it’s held up very well throughout.

4.25/5 Pear, cantaloupe, cocoa, coconut cream, almond paste. Nice and lightly creamy for a nigori. Medium sweet, slight tang, balancing bitterness. Robust, fruity, and flavorful. I’ve been drinking this over the course of about two weeks and it’s been delicious throughout.

4.25/5 Honeydew, almond paste, yellow apple, coconut meat, stone. Light acidity and faint sweetness with a nice nutty bitterness. Clean, smooth, and well balanced. Goes down easy but feels sophisticated. Had as part of an omakase pairing, went very well with quality sushi.

4+/5 Asian pear, walnut, ginger, fennel, celery, caraway seed. And indeed a bit of something reminiscent of a meaty green olive. Initially feels light but quickly becomes strong and flavorful. Fairly dry, but there’s a gentle sweetness, medium-low bitterness. Goes well with food. Has a bit of a bite near the finish. I’ve had this open for like three weeks now and it’s tasted good all the way through. Definitely an interesting one to try!

4+/5 Light, creamy, smooth, and nutty. Coconut cream, butterscotch, cantaloupe, liquorice, walnut. Feels delicate and light-bodied but the flavours are strong. Nicely soft and creamy texture in the mouth. Very nutty finish with slightly bitter aftertaste. Overall pretty dry. Brewed in Hawaii, fun find! I had this last month but had to wait for the brand to be added to the database.

4.25+/5 Butterscotch, coconut meat, honeydew, Asian pear, marzipan, fennel. Delicate flavours, but there’s power and complexity. Slightly sweet, medium-low acidity. Smooth and light with a bit of gentle cream. Nutty bitterness on the finish with a slight bite. I don’t know to what extent aging has affected the flavour. I thought the liquid itself would have a bit of a pink hue, but it’s really just the bottle, a little disappointing. Pink or clear, fresh or old, it’s delicious though!

4.25/5 Also strong and sweet. Sweet and nutty and slightly meaty, chestnut-like. Chocolate-covered blackcurrant, roasted hazelnut, black pepper, honeysuckle. Theres a flavour there that feels very familiar, but I just can’t quite describe. Delicate flavours but bold and complex. Medium sweet but quite strong stuff. This is a very interesting and unique saké that I’m really happy to try as part of this set. However, overall, the original Funaguchi is still my favourite.

4+/5 Strong and sweet with a smooth depth. Big cocoa and walnut flavour with persimmon and raisin. Gentle slightly peppery spice flavours, maybe a hint of ginger and allspice. Really interesting and flavourful, fun to try as part of this three-pack set. The aging gives a slight caramel tint, but I guess this doesn’t count as koshu? If I compare with the regular yellow nama-genshu, I like the original better, but this is still very good in its own right.

3.75+/5 Whopping indeed. Other sparkling sakés I’ve had have all been very light, so this is a big divergence. Probably the strongest sparkling beverage I’ve had, wine included. And yet, despite that strength, light and delicate bubbles. Butterscotch, cantaloupe, Asian pear, candied pecan, burnt caramel. Quite bitter, slightly sweet, faint acidity. I think I like the still version better honestly, the alcoholic strength makes the delicate bubbles hard to appreciate. But still pretty fun!

4+/5 Really nice and light. Lightly sweet and tangy, real clean flavour. Very light but pleasant bubbles. Big honeydew melon with a bit of green apple, and some clean rice flavour. Hint of raw almond on the finish, with very light bitterness as well. Simple but effective!
