Since I bought a car, I did my best to go to Kakinuma Brewery, which I had wanted to visit at least once. I bought two bottles of Hakurakusei because I wanted to buy something that I couldn't buy in the neighborhood anyway. I was surprised that the staff was very knowledgeable about the products. He said that new sake inevitably has a bitter taste, but the tailings make it seem milder. It has a slight yellow tinge, but it doesn't taste like it's aged. The aroma is gorgeous, but not showy, just like the aroma of a good sake. Slightly torrid mouthfeel. The flavor is more melon-like than banana. There is also a slight citrus-like acidity. The sweetness seems to be integrated into the umami, and is more delicious than sweet. At the end, there is a bitter taste like citrus peel. It is alleviated by mixing, but if you don't mix the tailings, it is quite bitter at the end. It is refreshing and has a nice sharpness. The freshness of the new sake can be felt, so it can be enjoyed on its own to some extent without a side dish, but it tastes better with a meal. New sake is always fresh and energetic, for better or worse, but I found this one to be a good new sake where I could hardly find anything to be concerned about.

I bought Akabu's seasonal sake SAKURA for the first time, and since I missed out on buying SNOW and Nigorigo, it's been a while since I drank Akabu's MOUNTAIN last year. It is a 12% sake, so it is very soft to the taste and I drank it quickly.

I had to reduce the amount of nigori sake in my refrigerator, so I opened a bottle of Futaragi, which I bought at the end of last year (I think). I was afraid to open it because the sparkling sake I drank in the summer was very healthy, but it was chilled in the refrigerator, so I opened it safely. The Futaragi is always nigori (muddled) and fresh, so we were not disappointed and it was really good! I wish I could have bought the Chinese zodiac label.

Yoshida brewery is famous for Tedorigawa, and their Modern Yamahai u series. I was attracted by the word "Modern Yamahai" and bought it because I enjoyed Kinjaku Yamahai very much. According to the catalog I got with the bottle, the theme is sincere terroir, modern Yamahai with original recipe, and sustainable sake brewing. The sake is unpasteurized at 13 degrees, so it is very easy to drink and tastes like white wine. I thought I would like a little more sake feeling, but it was really easy to drink and I finished it quickly. I recommend it as an aperitif (๑˃̵ᴗ˂̵)

KOHOSHIKU, 100% Omachi & unfiltered undiluted sake, was my favorite flavor! It had a refreshing green apple aroma, a fruity sweetness, and a gentle acidity that was pleasantly refreshing! Is it because it has a low alcohol content of 14 degrees? It was a delicious bottle that you could go on and on with!
