Rice polishing rate 55%. Production dateNovember 2020 16% alcohol. I like it 8/10. It was a business trip for the brewer. This is a sake made by a method called "snow storage". It is made by burying the whole cask in the snow, and it becomes mellow. It has a nice aroma and a clean taste. In-store tasting. The Daiginjo was sweet and easy to drink. The brewery's Steeped Sake is probably a bit stronger than I prefer for an unfiltered original.

Rice polishing rate 65%. Date of manufacture 2020/09 Alcohol content 15-16%. I like 4/10. You can feel the strong taste in your mouth, but it has a light aftertaste that doesn't leave a lasting impression. It's not what you would call an easy-drinking, refreshing drink, but it's a little unsatisfying. I chose the Junmaishu (720 ml, 1,400 yen) because it was in the price range I usually pick up, but I wonder if I would have liked it if I had made the Junmaiginjo: ...... I think I'll try warming it up.

Rice polishing rate 60%. Date of manufacture 2020/09 17% alcohol. I like it 8/10. Very gentle on the palate. It is sweet but not insistent and has a clear aftertaste. If you swallow it in one gulp, you'll almost drink it all in one gulp. I'd love to drink it in its original form!

Rice polishing rate 65%. Date of manufacture 2020/09 15-16% alcohol by volume I like it 7/10. I bought it at Izumi Shuzo's online shop. The taste is completely different from Sensuke, a brand from the same brewery, and it's fun to compare them. The taste is refreshing, fruity and light compared to the full-bodied Sensuke. You can enjoy drinking it because it is not sweet wine.

Rice polishing rate 65%. Date of manufacture 2020/09 17% alcohol. I like it 7/10. Purchased from Izumi Shuzo's online shop. Gorgeous aroma and flavor, then the spiciness comes into play later. Very tasty and also has a refreshing aftertaste. Seems to be gentler and easier to drink on the second day than right after opening it! My favorite.

Rice polishing rate 50%. Date of manufactureMay 2020 17% alcohol. I like 6/10. The scent from the vessel is modest, but when you fill your mouth with it, you can smell the gorgeous, not too harsh, aroma from your nose. to exit. The taste is sweet and generally gentle. The alcohol content is high, but you can gulp it down. However, the aftertaste that lingers in the mouth is not very good, so it is better to drink it with cheese and nuts.

精米歩合65％ 製造年月2020/06 アルコール分15％ 好み6/10 泉酒造さんのオンラインショップで購入。 華やかで嫌みがなく、刺激の少ないバランスが取れた酒。 色々な酒を飲み比べるなかで、基準になる味かもしれない。 同じ泉酒造の琥泉よりも香りが強く味わい深くまったりしているので、食中よりはツマミとじっくり味わう飲み方が良いかも。

精米歩合60％ 製造年月2020/03/01 アルコール分16％ 好み6/10 ピリピリと微炭酸が効きつつ、優しい甘さのお酒。 ふわっと抜けていき重みのある部類ではないと思う。 少しクセの強いツマミと合わせた方がバランスが良いかも。 冷酒だと後味が舌に残る時間が長く、少し常温に戻ったころが飲み頃としてgood!!

大正の鶴 特別純米 ライジング60 一回火入れ 精米歩合60％ アルコール分16％ 好み5/10 癖が少なく、どんな料理にも合いそう。 ただ、水っぽいわけではなく、 日本酒としての味わいがほんのり控え目に落ち着いている感じ。 香りも控えめ。

仙介 特別純米 白麹 無濾過生酒原酒 精米歩合65％ 製造年月2019/10 アルコール分13％ 好み7/10 蔵元を訪れて購入。 チャレンジ酒のひとつで、通常焼酎造りに用いられる“白麹”を使用した一本。 「好みが分かれます」と言われたが、美味しかった。 甘い部類の酒だが、酸味が効いており、生酒らしい発泡感もあり、ラベルに書かれている通り口当たりの良い一本でした。 また買いたい。

酒蔵を訪れて飲み比べ。 利き酒セット600円で五種類の中から三種類を選べる。 ○純米吟醸 火入れしたいつもの福寿。 フルーティーな香りが鼻から抜けていく安心の一杯。 ○蔵直採り 純米生酒 濃いい。 香りが立っていて雑味のない味わい。 いつまでも口のなかに居続ける感じ。 これが灘の生一本ってことなのか？！ ○純米原酒 コウノトリ 赤いラベルの刺激的な見た目に見合う、 辛口の一杯。 酸味もあり、とがった印象。 お酒の他に「やわらぎの水」がついてきます。
