A dry brand that is a complete change from Jikin. In the mouthfeel, the dry character was strongly asserted without any sweetness. Overall, we enjoyed it very much with a sense of difference.
Today, I went to a restaurant I had been wanting to visit with a junior colleague from work. Jikin has just the right balance of sweetness and drinkability, making it a dangerous sake that I could drink as much as I wanted.
Also at a sushi restaurant. It has been quite a while since I have had Kaze no Mori. It has a unique flavor with little bitterness and a balanced sweetness and acidity. I like this sake because it is a different type from the dry, refreshing daiginjos that I often drink.
I wanted to go to a nearby baseball-style sushi restaurant. Although it is a cup sake, the 50% rice polishing ratio makes for a clean drinking experience. It has a dry taste with just the right amount of sweetness to complement a meal, making it a hit with my taste buds. However, it is quite difficult to pour it from a single cup into an inokuchi!
It was cold today, so we had nabe (hot pot) and hot sake. My sister came to Tokyo with a bottle of sake recommended by an acquaintance. I tried various temperatures, but the unique aroma of the wooden vat was so strong that the hot sake was the easiest to drink and tasted the best.
