Aiyama 100% junmai sake with a Light rice-derived aroma, tangy mouthfeel. Aromatic sharpness, thick lingering rice flavor and bitterness. The full aroma is pleasant. The sake has a rough dry taste with strong alcohol in a good sense, but the sake degree is +1.2, which is above the normal level.

I bought it because of the dry recommendation. My personal opinion is that it is dry, but watery and lacks backbone. It is easy to drink, but it lacks the flamboyance that one would expect from a daiginjo. We will re-evaluate if the taste changes after opening the bottle. On the second day after opening the bottle, it became a little richer, but there was no significant change.

The water color is reminiscent of a slightly cloudy freeze. Fruit and rice graininess, with a clear sake core aroma. Thick and sweet mouthfeel, a little foam and freshness. Moderately light citrus acidity. The sweetness and acidity mix and turn into a rounded umami. High-grade citrus bitterness without astringency. Refreshing and rich aftertaste. There is a hurdle to get used to the sweetness. However, the highly balanced taste with a focus on mellowness and the harmony of viscous sweetness and freshness that feels like the opposite is one-of-a-kind. We enjoyed it deliciously.

The cork comes out with a pusher, reminding one of champagne on a special occasion. The wine has a syrup-like shine and a near-transparent water color. The ginjo aroma is reminiscent of cream with a hint of lemon. Viscous but not resistant, with a bubbly mouthfeel. After a moment of sparkling sharpness, the flavor is a happy combination of mature fruit sweetness and bitterness. After the strong sweetness, there is a pleasant lingering bitterness that is characteristic of Kangiku. After a few days, the bubbly sensation settles down to some extent, and a watery sensation is felt, albeit only to an extent of error. The right way to enjoy it is to drink it on a special occasion and be surprised by the bubbles.

The lingering taste is deeply astringent and sugary, reminiscent of charred oak. Heat lingers on the tongue. I thought it was mainly sweetness, but it is mainly natural and complex taste development in the second half. If you ask me if I like it, I prefer it less sweet, but for those who like "sugar without much fruitiness," I definitely recommend it. Another new experience for me, thanks.

The bitterness of the citrus peel overflows gradually. The palate is light but full of fruity sweetness. "Wow, this is delicious..." It's not thin. It's not thin, but it's a clear sake with a high level of coherence. It has a high level of perfection that is distinctive but not too sharp. The more you drink it, the better it gets, and I highly recommend it.

The strong sweetness of the rice spreads in parallel, and an intense bitterness, mainly citrus, follows just a little later. The aftertaste is mainly bitterness, citrus and a little sugar. Each of these flavors is strong, but they are not the unpleasant harshness that is often associated with sake, and there is no mistaking the taste. The taste development is not like sake but like whiskey, so the appropriate word is "strong" rather than "sweet" or "spicy". The taste is strong, and even the alcohol content is strong. The spirit of the brewer is so strong that he is betting everything on the satisfaction of the drink. It is not an exaggeration to say that it is one of the genres of Sono-Sangiku. I would like to recommend it to all Sannokiku lovers.

The aftertaste is graceful, as if there was no such thing as a rich sweetness. It has the image of a "Western-style confectionery with a Japanese flavor," but the rich sweetness is not to everyone's taste. If you prefer a rich and sweet Junmai Daiginjo, I highly recommend it.
