Purchased at Takizawa Honten in Narita City, Chiba Prefecture. Cold sake. The first sip is smooth and has no peculiarities! As you drink it, it has a slight, slight sourness that lingers in your throat. I was thinking of pairing it with yudofu (tofu), but both flavors seem to be blurred, so I might try smoked oysters...

At an inn in Kusatsu Onsen. Warmed sake. Easy to drink! The acidity is not unpleasant and disappears quickly without leaving a trace on the tongue. I don't think it will interfere with dishes, so it goes surprisingly well with everything. I found myself eating so much that I forgot to take a picture! That's how natural it is to drink 🍶.

Purchased at a Fukui Prefecture antenna store in Tokyo. Cold sake...sweet flavor at first sip. The first sip has a sweet flavor, but as you sip it, you will realize that it has a smooth, mild, gentle taste that reminds you of persimmons or bananas, even if they are fruits. I prepared Japanese snacks with it, but perhaps it would go well with Thai food. ⁉︎

At an inn in Misawa City, Aomori Prefecture. I liked last night's tasake, so I continued with it. Tonight's special junmai 180, chilled to a crisp. It has a pleasant taste that goes down your throat and lingers in your mouth and stomach... It goes well with sashimi, of course, but it is also good with fatty grilled fish!

Aomori City's Machinaka Onsen Restaurant. This is one of the sake comparison. It has a crisp, clear, moderately fruity mouthfeel, and a refreshing taste that is not taken away by the sweetness! The set of shiokara (salted fish) with grated daikon (Japanese radish) softened the salty taste and paired perfectly with the rice wine. The restaurant's original "kakiage" of apples and scallops was hot and crispy, another new-found delicacy... (The kakiage comes in two portions, but it was so good that I took this picture after eating one...)

Purchased at a mass retailer in Tokyo, attracted by the label. It was served cold. As soon as I opened it, the aroma that I, a sake novice, imagined was "the sake! The aroma is what I would imagine a sake novice like me would smell like. It is light and has a pleasant taste that does not linger on the palate. I would rather drink it a little bit at a time between dishes than to drink it in rapid succession. Today I will enjoy it with some Japanese and Western snacks and pork shabu-shabu.

Purchased at a mass retailer in Tokyo. Cup sake, served cold. Soft, fruity and fluffy at first sip, yet light and refreshing in a good way. Maybe recommended as an aperitif. Would it go well with Western food? Tonight with marinated salmon and coleslaw.

Yamawa瞑想水純米吟醸

Purchased at a liquor store in Sendai Station. Room temperature. Smooth, slightly thickened throat. It is easy to drink, but as you drink more, you begin to feel the dryness in the aftertaste. It may be refreshing if it is cooled down a little. It is best to drink it with Seri nabe (a hot pot of Japanese parsley) during the current season.
