Another version of Mushinzou Sake, with a crisp rather than fragrant taste and a slight aftertaste. Sake made with rice called Kinmon-nishiki grown in Nagano and cosmos yeast from Saku at Uozuoya.
Tachibanagura Sake Brewery in Usuda, Saku is owned by the family of Mr. Ide, a councilor in Saku, and is very famous for its aroma. It has an aroma (?) and wakes up your eyes.
The master served it to me. It is made the old-fashioned way, and the toji seems to be a great man of the Niigata union (?). It tastes like sake. Delicious!
