Vice Shogun Hatsushibori (Sake)
We happened to come across a local sake shop on a day when the brewery was open for business.
This is the brewery that produced the "No. 10 yeast.
The sake was made at 19 degrees Celsius with alkaloids.
The aroma and taste are deliberately kept calm, and it is designed not to be sweet, but to have a sharpness in the front.
The mouthfeel is sharp,
The lingering aftertaste is short and sharp.
The freshness of the first Shibori-style is backed up by the robustness typical of Nanbu-style brewers.
The core is thick without being flashy or assertive.

Chill it and enjoy a quiet sip. It goes well with candied yuzu citrus. It goes well with nabe (hot pot).
When you notice it, your cup has already gone down a notch. Oh, I'm out of one.
