From the label and aroma, I thought it would taste more like wine, but it has a strong, full-bodied sake-like flavor.
Perhaps due to its sweet and sour taste, it goes better with vinegared dishes than grilled fish or sashimi.

Nishide Shuzo [Shunshin] [Hirohisa], Komatsu City, Ishikawa Prefecture
Shunshin is brewed in the middle of winter using the 100 year-old "ikuhashimoto" method.
Mr. Hirohisa Nishide, the toji, is a hard worker who learned from Mr. Naohiko Noriguchi, the Noto toji, a "modern master craftsman," and after five years of training as a brewer, he successfully regained control of the brewery, which his father had handed over to him a long time ago.

Shunshin: Junmai with fresh yeast yeast and pure rice.
It is sour with a lot of acidity from the sake yeast.
Junmai Sake: Matorami
The label features two white cats, "Moro" and "Mee", who are the signature cats. It has a low alcohol content of 14%, which gives it a sweet and sour taste rather than a sweet taste.
Shunshin Beer yeast brewed Yamahai Junmai Hi-ire Ver.
It has a complex flavor, perhaps because it is brewed with beer yeast. Sweet, spicy, and bitter all at once.
I wasn't sure if the person at the booth talking with the other customers was from the brewery or the department store, so we moved on without much conversation.

SHIBATAThis is my first time drinking Shunshin.
It was brewed in 2020, so it has been matured for about 3 years or less🍶.
When I drank it, the words "thick, matured, and round" came to mind.
The umami is in full bloom and there is also an element of acidity = umami.

Sake no Omune is located between Settsuhonyama and Aoki stations.
They carry a wide variety of brands, from well-known brands to brands known only to those in the know.
The brands they carry are Kaze no Mori, Koei Kiku, Yokoyama, Laughing Four Seasons, Miyako Bijin, Furozumi, Okura, Toyoga, Yuraku, Zuikan, Raku no Se, Hanashimi, Etsukaijin, Shunshin, Komatsunin, Maibijin, Shikishima, Nihon-Soul, Bunkajin, Asahikiku, Takashi, Tanzawa, Duan, Souhyo, Sogen, Okuharima, Chiyodakura, Takezumi, Katano Sakura, Hachibei Sakaya, Sankotenkai, Kaiun, Shidaisen, Zanso Hourai, Akiga, Hosui, etc.
When I asked what sweet sake was available at Shunshin, this was the one I was told. I asked him if he had any sweet sake at Harushin. I asked him which sake was sweeter in Harushin, and he said "Mizuhashiroshi" which is also sweet but has a habit of sweetness.
It is made with yeast that produces high malic acid. It is sweet and sour and sweet and spicy. It has a sake strength of -18, but it is also very dry, so even those who like dry sake can enjoy it. It is a strong sake, so it is suitable for warming up.
It seems that mizu-hashiroshi has a habit, but I think this sake is also very good.
I think it is a sake for different people 🤔.
The specs alone make you think it's sweet, but it has a complex flavor.
There was also a sake made with Shunshin beer yeast but it cost almost 3,000 yen 😅.

SAMURAIZThis is Mr. Nishide's Hyakumangoku No Shiro.
Mr. Nishide's image is that of a sake with a strong acidity from a sake brewing process.
This is a fast brewing and refreshing. It is a beautiful sake with no negative elements.
We enjoyed it with firefly squid.
とんこIt is very easy to drink cold. Even if you drink it after a little while, it is not particularly spicy and can be drunk without hesitation. Because it is so easy to drink, you have to be careful not to get drunk.
Personally, I liked it cold rather than hot or heated.
