This regular sake is made from uninspected rice Yamada-Nishiki handled by the Tojo Town Minori Agricultural Cooperative in Hyogo Prefecture. Normal Yamada-Nishiki rice is 2.0 or larger in size, but this uninspected rice is rice that fails to meet the standard and is 2.0 or smaller in size and 1.95 or larger in size. Because it is uninspected rice, it is not assigned a grade and therefore cannot claim to be a sake with a specific name. As a result, it is a regular sake, but a fine, good sake with excellent cost performance is produced.

It is easy to drink. It also has umami.
It is good to drink with ponzu (Japanese sauce made from ponzu citrus juice) and feel the sweetness of the sake.
This special version is only available once a year! The sake that drips from the mouth of the squeezer is bottled without filtration, heating, or adding water, and tastes like it has just been born. It has a fresh, juicy, fruit-like aroma and a voluptuous, mellow taste that can only be obtained from the original sake.

When I drank it, I found it to be a very good sake. I honestly can't come up with the vocabulary to comment on many of the junmai class of local sake, but a proper sake from a proper brewery is good.
However, I prefer it at room temperature or lower rather than warmed up. I felt the balance was off if it was warmed up. If you have a bottle of sake that is about a 4-gou bottle, you can try various things with it.
