I had a chance to meet a friend from Shimane for the first time in a while and told her that I love sake, so I bought a small 300ml bottle.
The waitress told me that it is a classic, robust and tasty sake, but also modern and has a core fan base 👀👀.

I used to think about what kind of sake goes well with food, but after drinking this sake, I realized that I don't need to think about anything else because the sake is so delicious. I used to like sweet sake, but this one has just the right amount of acidity in the umami flavor, and it has been a long time since I have encountered a good sake.
For home drinking
Slightly sparkling unpasteurized sake
It is dry and has a strong umami flavor that does not overpower food.
It is a sake that tastes better with food than it does with bright and fruity flavors.
Ki The smell is of pure rice with a nice rice aroma, and the first touch is the tingling sensation of alcohol.

TURN: The taste is mellow and gentle, perhaps due to the aging process, and the acidity is similar to the taste of sake after a few days of eating seafood.
Conclusion If you ask me if it's apple, banana or pineapple, I'd say banana.
It's a bit like Kuroryu, except juicier, and has a Kuroryu feel to it, very nice Junmai.
