Juburoku (doburoku) from Takeshige Honke Shuzo!
This doburoku is only shipped every year from the second half of October to March, and because it's unpasteurized and the yeast is still alive, it must not be placed horizontally in a PET bottle with a hole in the lid!
Just as it is described as sweet and sour Awaraku, this is a doburoku that overturns the concept of doburoku you've been drinking!
It was a fun bottle that had enough sweetness from the rice that when you grinded the remaining rice grains underneath, you could feel the slight foaming and pleasant acidity spreading.
Because of the low alcohol content, you can guzzle it down with a glass, so even if you have three bottles in your fridge, it probably won't last more than two weeks.
If you like sweet sake, muddled sake, or doburoku, this is a limited time bottle that you should definitely try!

I pre-ordered it at the end of August through a guide from my favorite liquor store, and it has arrived.

The sweet and sour Awaraku in the photo expresses it all. It tastes like sweet sake with the texture of petite rice and the sizzling cider-like carbonation you feel when you crush it, making it a refreshing, mouth-watering drink.

You can feel the sweetness of the rice, but it's not too sweet like amazake. And it has a crisp sourness and carbonation.
It's not too sweet and the alcohol content is not too high, so you can drink it easily.

This is the first time I drank a light version of my favorite Twelve Six. It's so easy to drink and the strength is so low that it's really juice. I'd like to drink a lot of it, but today I'll drink only half.

Hi Yukachin😄 I love Juburoku no Toburoku, that one is like drinking rice, but this one is so light that it was easy to drink even in this slightly hot season! I recommend it if you like sweet sake ☺️.

Compared to raw doburoku, the fermentation process has stopped at the perfect point, so while it is gassy, it has a creamy, light mouthfeel and a mild, rich rice texture and flavor.

It's more like eating than drinking 🤣The texture is Mitsuya cider jelly. The kind. Rice grain feeling. The taste is Calpis. In other words, Calpis soda mumble jelly. Rice flavor is fragrant and delicious🕺

You can directly feel the good acidity from the live yeast and the flavor of the rice.
It's sizzling and piquant. The aroma and sweetness just like a pear spread in your mouth. The fruity flavor disappears nicely and there is a clean aftertaste. You can understand why it's so popular. It's delicious.
I've been going to Masu Shin Shuten, but this doburoku has been on my mind for several years. When I stopped by the store the other day, there was a wooden sign that said "Juni-Roku is available" and, of course, the actual bottle was there.
I hadn't drunk it recently, but I thought I would definitely like it, as I like drinking amazake at a temple teahouse, so I bought it for the first time.
I heard that the sourness comes on gradually after opening the bottle, but even on the first day, it was sweet but not drippy because of the carbonation. It's 5% alcohol content, so I drank it every other day for 10 days at the beginning of the evening instead of beer, and I could enjoy the gradual sourness and change. It's similar to kimchi in the sense that I enjoy the acidity and fermentation😆.
It has a less alcoholic, sweet and sour taste than other brands I've had before, and is of natural origin. I'm looking forward to the Sentry Snowman next.
