The name "Yuri Shizukuri" comes from the name of the president and chief brewer, Mr. Yuri Inoue.
The lees are submerged, and when mixed, it turns light and cloudy. It has a fresh, melon-like flavor. The acidity is quite strong, and the sweetness fades out with a slight bitterness at the end.
Leading sake stores in the Kansai region have started to handle it one after another.

On October 9, Inoue Sake Brewery had a stall at an event in nearby Matsubara Park. The toji (master brewer) and president, Mr. Yuri Inoue himself was there, so I bought a bottle of this sake while listening to his story. It is not cheap for a junmai sake (2200 yen), but it has a rich rice flavor and elegant acidity, and the sake degree is -6.8. I would never have bought it if I had only seen the number, but I was impressed once again by the richness and depth of sake variations, and I knew I had to try it to understand. It was delicious!
Ears of rice swaying in the wind, illuminated by the gentle evening sun. The mellow aroma and sweetness of the rice passes down your throat, and then disappears so quickly that you feel it is fleeting.
Slightly yellowish.
Sweet aroma of mango and passion fruit.

It gives the impression of being a man's sake, perhaps due to Hita's hard water. It is not a trendy type of sake, but this kind of austere sake is necessary.
Yamadanishiki ver.
Compared to Omachi's lees sake, it is slightly more lees and has a 1% lower alcohol content (17%). The bottle size is also changed from 500ml for Omachi to No. 4.
The aroma is like rice itself and rice malt.
The pure sweetness that is typical of Yamadanishiki passes through the nostrils with a slightly thick texture, and there is a slight bitterness that seeps into the tongue. A slight bitterness seeps into the tongue and a tangy sourness on the tip of the tongue.
