I will be drinking this sake, a souvenir of Oita. Kakunoi "Hyakugo Brewing" from Inoue Sake Brewery in Hita City, Oita Prefecture, Japan. Citation below. A very small brewing process weighing only 200 kilograms. The sake is brewed by feeling it with the eyes and hands. The sake is pressed by hand without using a machine, After the lees have slowly settled, only the supernatant is gently scooped out, After the lees have slowly settled, only the supernatant is gently scooped out. The final product is then fired. The taste is clean, yet deep, The taste is clean, but with depth. Yamada-Nishiki, 58% polished rice The bottle was opened immediately. The aroma is a gentle ginjo aroma. In the mouth, there is an elegant and beautiful acidity and sweetness. After that, the gentle umami spreads and disappears quickly. This acidity is great ✨. Warming it up a bit enhances the umami even more! Really delicious 😋. The special junmai unfiltered unpasteurized sake has even deeper umami! I'd like to go buy it next season since it's so popular ✨. Thank you so much for the food 😊. On a side note, I was introduced to a TV Asahi affiliate, It was introduced in the TV Asahi series, Sakagami, Furudate, Uga's Nippon no Sake and was highly praised 😁. I also heard that it was adopted by JR Kyushu's Natsunoshi.
