I buy Hououmida with high frequency, but this is the first time I bought Heki-ban.
The taste in the mouth is sweet and delicious, as is typical of Hououmida, but it also has a spiciness and a strong flavor, as is typical of the original sake.
I paired it with seafood, but I felt it was a powerful sake that would also go well with meat and tempura.
Junmai Ginjo-shu brewed by a Tochigi sake brewery with Omachi from Okayama.
It has a refreshing acidity on the palate, but the richness and umami that is typical of Omachi comes through later.

We had it again this year, Hououmida's Wine Cellar Sparkling.
This is a sake that I think I may like more than any other Hououmida.
It is a perfect marriage of the elegant sweetness of Hououmida, the gorgeousness of Yamadanishiki, and the sparkling sparkle. It tastes like sparkling wine, perhaps because of the use of wine yeast.
Then, drink sparkling wine! But because it is made with rice, it does not have a grape-like flavor, but rather a sake-like flavor.
It is difficult to evaluate, but I personally like this sake and would recommend it to many people.
I will buy it again next year.
