My first sake in a while is a famous sake from Kure, Hiroshima, called Amego no Tsuki, which has been waiting its turn in the refrigerator for a while.
In the mouth, there is no gassiness. It has acidity and a hint of sweetness. It has a moderate bitterness and is refreshingly clean and crisp. The sweet fruity aroma that escapes from the nose at the end is nice.
Although the rice polishing ratio is 60%, it is a delicious sake with no off-flavor.
As the label says, "Drink as soon as possible after opening the bottle," I will drink it slowly while watching Mr. Otani!

Amego no Tsuki Special Junmai Thirteen Nights Nama Sake
The moment the bottle was opened, it flew open and about 10% gushed out💦.
Strong gassy feeling! (like sparkling sake).
No oriki feeling, but the bitterness from it is strong 💦. The impression is that it has a strong bitterness 💪 It is dry and refreshing, with a moderate sweetness.
I wonder if it is less sweet and more gaseous than before? (Is it just because there was a short period of time between filling and drinking? I'm not sure 🧐)

Every time I drink it, I am amazed that such a good sake exists in the world.
The aroma is full, deep, and fresh, with a hint of pear.
The taste is just like the aroma. Slightly gassy taste. A refreshing aftertaste that lingers even after drinking. It is the best. I honestly can't think of a comparable sake.
The second bottle is the moon after the rain. The mouthfeel is soft, but you can feel the dryness along with the aroma of rice. It is good for drinking well. It was quite crowded in the car, but we enjoyed the sake slowly and had a good time.
It is made with 100% Hachitan-Nishiki "Kure Miki Rice" produced in Kure City, and is a very limited edition sake with only a small production and only 3 sake stores in Hiroshima carry it in the whole country😳.
The aroma is gentle and smooth, with a fruity overtone, a soft sweetness in the mid-palate, and a light dryness in the finish!
I paired it with sukiyaki tonight and it was a perfect match 😋.
