Saito no Shizuku is Yamaguchi's sake brewing rice.
It is crossed with Yamadanishiki on the paternal side.
This is a non-junmai, al-soaked daiginjo.
The aroma is a sweet ginjo aroma.
In the mouth it has a sweet and rice flavor that is not too assertive, maybe a little light 🤔.
From there, bitterness and alu-ness join in, and it finishes with a refreshing acidity.
The entrée was grilled Renkotai sea bream with small sardine tempura and pork wrapped in soybean sprouts 😙.
