16% alcohol by volume, -2% sake by volume, Yamae-Nishiki from Nagano Prefecture, 50% polished rice.
The rice is polished to 50% and the result is a local sake that has the aroma of a junmai daiginjo but with a clean finish and junmai ginjo character. The hi-ire process gives the sake a more subdued taste than the pure sake. It has a crisp acidity. It has a moderate bitterness and is a good mid-meal sake.
After one summer, it has matured to a rich flavor just in time for the arrival of autumn.
The crisp, dry taste has been maintained, but the aging process has given it a softer mouthfeel.
It is a traditional hiyaoroshi sake, which is made from fresh sake, so it has a strong umami (flavor).
My daughter gave me this sake from the Kamidaya Sake Brewery in Matsumoto City, Nagano Prefecture, as a Kamikochi souvenir. It is called "Kappa no Yume" and is sold exclusively at Hotel Shirakaba-so. It was a refreshing, slightly dry, easy-drinking sake.
