We didn't think it was bamboo, but interpreted it as phytoncide from the mountains of Shinshu.
I love Honkin Junmai sake.
I first drank it in 2023 and became a fan!
However, last year and this year it seems to be a bit sweeter than then (maybe because it has lost most of its gassiness?).
As for the aroma, the melon-like aroma has diminished, and there is a slight mirin-like aroma, or a little bit of the normal sake-like aroma that you can find in supermarkets.
Still, the characteristics are still there, so I continue to drink it.
I am new to sake, so I would like to hear an explanation from someone who knows more about it!
