I will drink it for the first time, Biwa no Sasanami. It is a sake brewery in the town of Moroyama, Saitama Prefecture. The name is said to come from the founder's birthplace near Lake Biwa.
Just like the classic label, the taste is also very classic. It has a rich sweetness and umami flavor with a clean, dry finish. It is my favorite type. And the price is reasonable, so I am sure I will repeat my purchase.
KOEDO SAKE COLLECTION 2024
The first event organized by Matsuzaki Sake Shop in a long time!
48 breweries from all over Japan gathered for the first and second parts of the event, which was a great success.
Biwa no Sasanami Suisei
Rice polishing ratio 91%.
I thought maybe if it was heated up
I thought it might be more rounded if it was heated up hot.
I was in Monbetsu city in Okhotsk for work and saw beautiful drift ice 🧊🍶Today I had this dry sake 🍶It's a nice, light, non-habitual, sharp and delicious sake 😚.
Thank you very much, Takk0103!
That's great!
I was more interested in the pictures of the sea than the drinks 🌊.
It made me want to go there so much 😊.
Strong aroma. Light taste. Not puffy, mouth washed out, strong condiments?
This would be better warmed than hiya.
Serve with prosciutto jerky and figs pickled in sake.
☆ 2.0
The aroma is a little bit peculiar, a little bit like celery.
It is sharp and spicy, so it might have been a little better if it was warmed up ٥-¯¯.
This is summer! Summer vacation - a summer vacation!
It might be nice to drink while eating 🍉 on the porch with a fan flapping around!
It might be nice to drink while eating 🍉 on the porch while flapping an Uchiwa!
I'd love to live in a house like that in summer in Japan. 🇯🇵
It's so refreshing and easy to drink, I drank it in no time at all!
What sake do you think is secretly good among Saitama sake?
Biwa no Sasanami.
More than 10 years ago, when I was going to an izakaya in Kumegawa, I asked the master, "What sake do you usually drink with your evening drink?" I asked the master, "What sake do you usually drink with your evening drink?
This fire-aged, 60% polished junmai ginjo has a pretty good balance of freshness, umami, acidity, and bitterness👍.
3 wild vegetables (udo, bracken, and fuki)
Spinach with sesame paste
Teriyaki chicken thigh
Hiraccio-san Good evening. I had stayed away from Biwa no Sasanami because I thought it had changed its taste. But when I read the report, it looks good. I will try to drink it again. Udo is a specialty of Saitama! It tastes good when you grow up.
Good evening, Mr. Nochi😊.
I think it had been more than 5 years since I had a good drink too.
I would like to taste Saitama's udo as well.
Wild vegetables, bitter taste is delicious when you grow up, isn't it?
Hi Hi Hiraccio, ☀️
I've been liking and paying attention to you for probably 10 years now, but I think it's hard to break into the market. It seems to fit the recent trend...
Jurian, good evening😊.
You've been on my radar for a while now👍.
I haven't had it for quite a while this time, so I would like to pay attention to it again.
This fire-aged Junmai Ginjo was quite well-balanced.
I've been drinking only nama-shu, but not this time,
When the bottle was opened, there was no aroma,
It is a classic Junmai sake, not a sweet sake. It was very light and smooth.
It is not too sweet, but rather a classic junmai sake.
I wonder if it would be better as a heated sake. I drank it all up, but..,
