According to the official website, it is unfiltered. It's been a long time since I had Biwa no Sasanami. The green bottle I drank before was fresher and more fruity. This one is not so sweet, but it's surprisingly light and refreshing. Maybe because it's been a long time since it was made, it has a bit of an aged feeling.

Just like the image that comes to mind when you hear the words "Junmai Nama Genshu", it has a freshness, a delicious taste, and a refreshing mouthfeel. It's not easy to drink unpasteurized sake, but it has a high alcohol content.

The shop's pop-up said it was post-Jyuushiro, and I bought it thinking, "Really?" But it's good! It has an authentic taste and sweetness. It's hard to find a sake with such a good price. It's a real treasure!

This is the third one-cup bottle for dinner. Asahara Shuzo Biwa no Sasanami Junmai Genshu, served cold. It has a light mouthfeel and a good acidity. It's a taste you can keep drinking. Cup sake is once again delicious! We bought it at Ajinomachidaya in Nakano.
