Nihonmori Junmai Daiginjo Nama Sake
The sake I drank at the "HYOGO SAKE EXPO 2023" in October changed my image of Nihonmori as a delicious sake.
It has a gradually spreading umami flavor, with a slight bitterness and a slight sake-like taste, but it is easy to drink.
There were not many people lined up at the Nihonmori booth, so I was able to buy it right away😅.
They also brought "Souka Junmai Ginjo" and "JAPAN SODA".

It was a gift from my aunt who doesn't drink sake.
We drink it cold.
The aroma is fruity, sweet ginjo aroma, a little almond aroma, and alkali aroma. The aroma lingers for quite a long time.
The mouthfeel is smooth and smooth.
The taste is sweet and fruity. It has a bit of nuttiness in the middle, and is not nearly as bitter and spicy as it should be, but has a bit of an "al" feel to it.
It is easy to drink, but it is my favorite type of beer.

There I happened to find a bottle of Nihonmori Junmai Daiginjo Nama Sake.
It was the cheapest price I had ever seen for Junmai Daiginjo!
I bought it on impulse!

It smells like regular sake 😉.
When poured, it is clear and has a yellowish tinge.
The spiciness and acidity jumped in at once.
It's just right. ‼️
The flavor is robust and I don't feel like I'm missing anything.
With a time lag, I felt a creamy sheen from the center to the back of my tongue, and an astringent taste appeared further back on the tongue 😎.
There is no complexity in the flavor, but each flavor is simple and fully enjoyable.
I prefer it when it is well chilled as it gets a little peculiar when the temperature settles down 😋.
and on the third day after opening the bottle, the acidity appeared first, followed by the complex sweet and spicy flavors.
It is not heavy.
Looks like I should have let it sit for a bit 😉.
