Quite a crisp and strong sake. It has a strong flavor.
It doesn't go well with peach mozzarella, but it went very well with the strong flavored stir-fried mushrooms with yuzu kosho. I am looking forward to seeing what we will pair it with next.
First attempt! Junmai-type (junmai-shu, junmai-ginjo-shu) oriki up to the last mash of the current year was collected from the bottom of the tank, blended, and bottled together with junmai-honmai josumi-shu. A mermaid point has been added to the label to match the summer season.
Today, as the Bon vacation is over and work is winding down, we open a bottle of the summer version of Urasoko, a popular product from Hayaseura that we got on a recent visit to Fukui. ❗️ The oriki from the junmai series (junmai sake and junmai ginjo sake) is collected from the bottom of the tank, blended and bottled with the junmai honnou josumi sake. ❗️ The beautiful blue color and translucent white color of the label reminded me of the "ocean" of the Sea of Japan as seen from Mihama, Wakasa, The most interesting sashimi was the one I had never tasted before, the Higeodara (Alaska Pollack) 😋 The taste was a hit with the kids too!
This is also the first Hayaseura, a summer-only orikawari type.
It is a fairly dry sake with a restrained sweetness that comes on strong later. The orikiri mixture makes it a little milder, but the unique bitter flavor is impressive. With a high alcohol content of 18 degrees, it is quite a punchy sake.

Urasoko in summer!
I was a little excited when I encountered it for the first time. Purchased without hesitation.
It is refreshing and summery, but has a strong Urasoko-like flavor that comes later.

I drank a lot of Hayaseura when I was working in Fukui Prefecture. This is the first time I have had this sake, and it was fantastic.
