At home. My first Kamo Nishikishu. Almost no aroma. Slightly carbonated and alcoholic in the mouth. It has acidity and umami, but the bitterness is strong at the end. I'll try to warm it up a little and see if the taste changes after tomorrow.

The spring color expressed on the label and the light nigori image on the palate are perfect. The sake quality has been carefully improved by adding cost to some of the rice used for the hanging rice and using original polishing rice to make the lingering aftertaste smoother after swallowing! The aroma is soft and gorgeous, reminiscent of the fragrance of cherry blossoms and spring flowers, and the pure sweetness and clear umami spread out to create an elegant aftertaste. Enjoy spring with seasonal ingredients!

Like the Shichibon-yari I uploaded the other day, I got this Kamo Kanehide at a certain store in Utsunomiya, and this is the first time I have seen it. It has a freshness that you can feel even though it is fire-aged, and on the other hand, it has a full flavor that is typical of Hiroshima brands, which is really wonderful. I thought I should be aware that it is a little different from the image of traditional Hiroshima brands such as Houken, Kamo Kanehide, and Amego no Tsuki (which I have never had). Highly recommended, give it a try.

2025.33th. It has been a long time since I had it, Kamo Kanehide. This time I bought it because it was recommended by Kai of Sakelabo. As you said, it may be the ideal taste for a non-sweet spring sake. I have the impression that Kamo Kanehide itself is not a sweet sake, and this sake is not very sweet either, but it is fresh and has a nice ooligalami flavor, making it a very easy to drink spring sake. Although it is still cold now, it has a freshness that is a little different from the nigori of winter. It is not sweet, but it is easy to drink, which I would recommend to beginners, and it also felt like a juice. I would like to have it again next year. Thanks for the treat.

Next was a special junmai sake. I think this is my favorite sake I've ever had. It is so delicious I could drink as much as I want. Unfortunately, it was not sold at the store and I could not purchase it 😢. I want to meet it again!
