The taste is too strong to win over sashimi. It barely goes well with red prawns.
I tried to match it with konbu-marinated baby skin, thinking it would go well with it, but although they do not defeat each other, they cancel each other out beautifully and the deliciousness disappears, making it a mystery.

The sixth tasting cup at Yamanaka Sake Shop was Kamo Kinshu Akiagari Special Junmai by Kanemitsu Shuzo.

Kamo Kanehide Special Junmai Autumn Agari
Sake that starts with umami (sweetness) and passes into bitterness.
Easy to drink on its own.
Of course, it also goes well with food!
It is a limited edition of Kamo Kanehide version of Yamatoya Shuho's original label. I have a weakness for gorgeous labels and "limited editions" (^_^.)
It is made from 100% Hachitan-Nishiki sake rice produced in Hiroshima Prefecture, and is a once-fired product.
The top aroma is slightly cool and refreshing, and the overall flavor is based on a soft acidity, making it light and refreshing to drink during this still-hot season.
The aftertaste is light with a light acidity and a touch of astringency, but it wears off quickly, so it can be drunk on its own or with a meal! Delicious 😋.
I finally got to drink Kamo Kanehide😄, which has been on my mind since I started drinking sake.
As a whole, it has a light flavor, with a good amount of gas, and a sweet but slightly dry taste at the entrance.
The sweetness is more pronounced on the second day than on the first day after opening the bottle, making it more balanced and tasty. ☺️
