It happened to be a light nigori hi-ni.

The first glass was a little pungent and bubbly.
From the second glass, the bubbles stay in the nigori and accentuate the mellowness.

It was a gentle and mellow sake from start to finish.
I thought it would be sweet since it has a Sake meter value of minus 40, but the sweetness was very slight.
Unusual pink nigori sake!

At a comparison of three kinds of Shimane's local sake.
The sake brewery, Eiyokegetsu, makes all of its sake from local rice and water.
The reason why they use Hiroshima rice even though they are in Shimane is because they are located on the border of the two prefectures, so it is said that they are neighbors.
It is fresh and dry with a soft and aromatic taste.

The saltiness of the seared duck with egg yolk and soy sauce complements the sweetness of the sake.

I found Ikezuki at a roadside station in the town of Onan, Shimane Prefecture!
The sake has a nice aroma from the wooden vat and is easy to drink, with a consistent taste.
I drank it in one gulp with a side of Hamada's akaten (red tempura).
