The store owner told me that the flavor would come through if I let it sit for a few months. I bought two bottles by mistake, so I opened the bottle to try it out. When I opened the bottle, I was greeted with a new aroma. The aroma is not assertive, but it has a sweet aroma like syrup, followed by a weak sour aroma like dried plums. The taste is also complex. It starts with a sweet white wine, followed by sourness and weak bitterness. The taste is strong~. When paired with shredded cabbage dressed with salted sesame oil, the sweetness increases and the wine becomes more drinkable as the corners are removed. However, some bitterness remains. When paired with poached Pacific cod, it has a strong flavor that is not defeated. However, the aftertaste of the fish is washed away, and you can eat it with a new feeling. I'm going to drink it after I let it sit at the end of the year!

This Sake is fruity, crisp and has a long aftertaste. The flavor is like a young pear with a hint of licorice. The acidity gives this a bright and full mouth feel. I am surprised at how long the finish is for this Sake.

Benten appears frequently in our home. Is it because it is unfiltered? As soon as the bottle is opened, a nice aroma rises from the bottle. The ginjo aroma reminds me of sweet fruit. Pineapple? Sweet mandarin oranges? In the mouth, contrary to the aroma, the flavor is mellow and clean. When paired with a salad, it maintains a solid, down-to-earth feel without being overpowered by the celery or the sweetness of the tomatoes. And when paired with the grilled nodoguro (a type of northern bluefin tuna), which was on sale at a discount, it's a perfect match, with an added sweetness, but with a refreshing aftertaste! A powerful sake that never forgets to assert itself even after the strong flavor of grilled marinated chicken and vegetables. It is definitely a brand that is sure to be a winner. Since the sake remained until after the meal, we extended it with seared nori seaweed and Himalayan salt. I can't stop now!

Tonight, this one is brewed with Yuki-no-Megami. It seems that only daiginjos can be labeled as Yuki-no-Megami, so it is modestly labeled only as "snow. When the bottle was opened, it had a fruity aroma full of happiness. In the mouth, it has a thick, robust flavor of pure sake. It has a strong flavor, but after the sweetness, it has a clean and crisp taste. Delicious as it is... After the sourness of coleslaw-style Chinese cabbage, the pleasant sweetness stands out and is also delicious. â™" It is also good with fried food, so I quickly cooked some Nagasaki frozen hatosi. One word, umami...it wraps up the fragrance of the shrimp and the rich flavor of the fried food nicely. Great sake!

Here is tonight's accompaniment. When the bottle is opened, the aroma is fresh and invigorating. In the mouth, contrary to the aroma, it has a robust flavor as a pure sake. It also has a thickening taste. The strong flavor has a spicy finish that can be felt clearly when swallowed. With chicken, the refreshing taste stands out even more, and the oil is washed away. The goldfish in ume plum sauce brings back the original flavor, which is also good.

Purchased at the Yamagata Antenna Shop in Ginza. Modest but fruity ginjo aroma. The aroma is sharp and crisp. The taste is light and dry, but also fluffy and aromatic. There is not much alcohol, but the taste is rich and thick. It is light but has a strong flavor. Orbenten-san has a variety of different types of sake, which is fun to try.

Machida City PayPay Campaign 20% back👍 I bought the last bottle 3 times 🚃 and went home impatiently because the campaign is in July. The top aroma is a sweet ginjo aroma. The sweetness is sweet. In the mouth, sweetness, slight gas, and bitterness. From the second sip, there is a balanced weak bitterness with umami. The alcohol content is high at 17ºC. Classic Junmai Daiginjo-nama sake. It's not a modern style, but this brings out the best of Omachi, doesn't it? It has such a rich ginjo aroma, but it's better in a gulping glass than a wine glass 🍶. It smells a little bit and the nose after you hold it in your mouth 🙆♂️. It is good as a food sake 🍶. 4200 yen without tax

Tonight, a bottle of this one brewed with rice to eat. The aroma is subdued. On the palate, it has a sweet start but finishes quite clean. When paired with raw shirasu (baby sardines) dressed with egg yolk and men-tsuyu (Japanese soup stock), the flavor of the sake becomes more lively and delicious. It is a sake that brings out its potential more with a meal than when drunk on its own. Delicious!

Rabenten is not often seen at liquor stores, but since it was at a department store, I bought it. The Yamadanishiki sake was sold out, so I chose Dewa Sanzan. It is quite gorgeous and fruity. The second half is a little spicy, but it is easy to drink.

A series of spoils from a recent business trip I'm also a big fan of the food at home... I was curious about the 100% Tsuyahime sake and bought it! Is it similar to Akita Komachi? It is slightly fruity and has a slight rice taste afterwards. I was very, very pleased with the taste. I was very, very pleased with the taste!

This is also at the tasting. I had wanted to try it for a long time. The brother here was very friendly. I didn't buy it, so I won't say a spell. The sake is beautiful and goes in easily. I have never had such a beautiful Aizan. Personally, I prefer a little more umami. It was a little expensive, so I bought a bottle of Dewa Sanzu, which I had originally wanted to buy. I also bought some craft otter sake because I was curious about it. Next week, Isao Heki is coming to Kansai for the first time in a while, so I am looking forward to it. I plan to buy some flower yeast if there is any.

I've been sober for a while, but that's finally lifted! So here is a bottle that has been a long time coming, and no mistakes happen. This is a gem brewed with Omachi, my favorite sake. Upon opening the bottle, the ginjo aroma reminded me of sweet fruit. The taste is rich in the mouth. Although it has been bottled for a while, there is a weak shwashiness. It starts off sweet, but once you swallow it, you will feel refreshed. There is a slight sourness that lingers. A bit of ripe pineapple peeks out. The sweetness is pleasant and drains away the oil when paired with a salad with spicy sautéed mushrooms. The sweetness of the sauce was pleasantly sweet and helped to wash away the oil. After the main course of homemade pork sautéed with soy sauce and malted rice, the strong flavor comes back, but it washes away the fatty taste and you are plunged into an endless loop. It's great to be able to enjoy various flavors depending on the pairing.
