Sake is infused with carbonic acid to make it sparkling.
I don't think sake and carbonation go well together.
Carbonation is delicious when it is naturally fizzed in the bottle, like unfiltered raw sake, to the point of being tangy on the tongue.
On my way back from a business trip to North Kanto ✋🏻, I got off at a great restaurant for the first time in a long time💦.
It's a brand they didn't have before, but it's dry and a little alcohol stings a bit.
At Andou Sake Shop.
Mr. Ando is famous for Kumanbachi and Biwamin.
I have never bought sake because I don't have much taste for sake...
But
What's that?
Amedare... and Hikouichi.
My repertoire has been growing.
The limited edition sake that came in this time...
Junodai, and it's under 2,000 yen!
I couldn't help but buy it.
I bought it last week and opened the bottle.
The aroma is fruity.
However, when you put it in your mouth, it is light and dry...
It is not...
Light and light taste❗️(°▽°)
It's like a dish made with...
The more you drink it, the stronger the alcohol taste is.
That's all for tonight.
Maybe tomorrow it will change...
The second day after opening the bottle, I said it was light, light and light...
But the taste is now well developed.
The alcohol taste is still strong.
The bitterness in the aftertaste is also stronger.
This is not my favorite.
Ichidai Yayama Sparkling
11-12% 375ml 990yen
I bought Yayama because I wanted to bring a small sparkling sake as a souvenir. Of course, I also bought one for myself.
Opened the bottle. A pleasant psshhhh sound.
I think sparkling sake is often made sweet, but this one is much drier. There is almost no umami or sweetness, and the finish is dry. The aroma is slightly muscat-like.
For a moment, I thought it tasted a bit bland, perhaps because I like sake with a strong flavor. However, I like soda that is not sweet, so I switched my mind to that and tasted it through my throat.
The sake is junmai (pure rice), but since it is carbonated, it is not labeled as junmai sake.
Of course, a glass of wine is recommended. It is good with all kinds of dishes from sashimi to yakiniku (grilled meat).
Chugoku Brewery has changed its name to Sakurao Brewery and Distillery from 2021.

Junmai Daiginjyo Nama-Genshu, Polishing ratio 50%, ALC15
⭐️⭐️⭐️⭐️⭐️
2021 Company name changed to Sakrao B&D (Sakrao Brewery and Distillery) was confirmed on the official online website.
The aroma is subtle, and the sake has a waist-sitting flavor with the light shuwiness of a draft sake.
