Sae Special Junmai Namaishu ⭐️⭐️⭐️⭐️ 100% Bizen Omachi, 60% polished rice ratio ALC 16%, Sake degree +15 or so Tonight's fifth sake was Hyakugakumon🤗. Slightly sweet aroma. When you drink it, the umami of rice and green apple-like aroma comes through. and green apple-like aroma, and combined with the transparency typical of jun-dai, it makes the cup go down smoothly. In terms of aroma, I felt it was somewhat similar to Tomikyucho's HENPEI. I also thought of Kaze no Mori's Rusuba Kaze, but I wonder if it has a slightly astringent taste among the five flavors. ⭐️⭐️ Staff recommendation for May from the Sake Sho Yamada hanpukai. Personally, I paid a lot of money for this hanpukai's secret slot, so my satisfaction level is a little low because I inevitably want more. Besides Kaze no Mori, Mimuro Sugi and my personal favorite sake breweries, Nara has many other sake that I would like to drink: ☺️

I came back to Japan. When I open the fridge after returning home and find a bottle of sake like this in there, that alone makes me happy ✨✨. It is served chilled in a wine glass. The aroma when the bottle is opened is thick and fleshy, with a slightly rich isoamyl aroma. When you let it air out for a while while turning the glass, the isoamyl type aroma disappears and you can smell the weak ripe aroma and thick acidity in the back of the glass. In the mouth, the dry, thick acidity surrounds the rice flavor, while at the same time keeping its outline in the mouth. The finish is flowing, clean, and dry. This is a wonderful wine. The overall impression is dry, and while the basic tone of the sake is so-called "dry," the umami maintains a crisp outline in the mid-part of the bottle. Beautiful mouthfeel that finally appears in the latter half of the finish. The overall sense of balance and the careful construction that you will be reminded of later. It's delicious ✨. Among all the Omachi I've had so far, this was the sake that was the least "standard Omachi flavor" in a good way. It made me think once again that sake is not about the rice, but about the construction ✨. This was fantastic 🍶.

This time it is Hyakugakumon Junmai Ginjyo Nama Genjyo, a.k.a. Rainbow. The characters are rainbow 🌈. It is a sake from Gosho City, Nara Prefecture. Hyakurakumon is personally attracting a lot of attention this year, I brought this sake home when I heard that Mr. Taniguchi, the co-president of the company, would be visiting the store for an event. The aroma is sweet cotton candy with a hint of apple. It has a thickened mouthfeel. The juicy sweetness and deliciousness is balanced by the acidity and bitterness, and the balance between the rich sweetness and sharpness that is typical of Omachi is very pleasant. At this event, Hyakurakumon prepared two types of sake, Rainbow and Sae, and they are both made from the same Omachi, but they are made differently for sweet and dry tastes. At first impression, I thought I would choose the dry Sae, but when I tasted the Rainbow, I was surprised, The first taste was sweet! Too sweet? But when I tasted it one more time, I thought it might be easy to drink because it was sweet but had a clean aftertaste. The first impression is not everything when it comes to alcohol 😊. Just now at work, a coworker knew I loved it and gave me some Aomori's specialty squid crackers 🦑 thanks 😆. Ika senbei definitely goes well with Rainbow! Wow, the best!
