The second glass was Hyakurakumon, a local sake from Gosho, the same place as Shinomine and Kaze no Mori.
It was sweet and fruity at first, but then it became tangy and stimulating.
Of all the sake I drank today, this one felt the most like sake.
It is a tangy, dark drink, but the flavor is not dense and it is tangy and dry. It has a fruity, woody aroma that is a bit unique. It has a crisp finish with umami and acidity.
It is not simply a dry sake, but has a depth of umami!

I came across this sake when I visited Nara.
I ordered it because it had a "Hyakugakumon" on the back? was attached to it, so I grabbed it and ordered it. 🤣
It is made from Omachi in Okayama prefecture.
It tastes like an easy drinking Omachi 😁.
The label is unusual, or rather, all the notations are written backwards 💦 so it's hard to read.
I guess it's like looking at the gate from the back 👍.
Hello Robin. The back of Hyakurakumon means that it is made with out-of-order rice. I personally have been paying attention to Hyakurakumon lately, so I like the red label too 😊.

This is the first sake brewed by Mr. Taniguchi, who took over the business of Katsuragi Shuzo.
The bottle was opened in about an hour while slowly enjoying the doburoku dance.
The first aroma was a soft floral scent mixed with pineapple.
It is a vigorous and dry sake.
The freshness and mild acidity
The freshness and mild acidity combined with the rice's crumbly texture make it a dry and delicious sake.
It is dry and delicious!
It is not possible to open the bottle without chilling it thoroughly, but when it comes back to room temperature, a slight sweetness takes over and the flavor becomes more to my liking.

We are very happy that it turned out okay.
This time it was only a small amount of doburoku, but they would like to sell it as sake in the future.
